Fish Tacos with Roasted Red Pepper Aioli {dairy, gluten + egg free}

The best fish tacos I've ever had were in Florida, made with fresh fish straight from the Gulf. Living in the midwest, it can be hard to find really fresh, delicious fish without paying a pretty penny for it. I have been able to find some really decent, wild caught fish at our local grocery store and it is perfect for these amazing fish tacos!

Green Bean Casserole {gluten free + vegan}

I don't know that I have ever really liked green bean casserole. I remember it being on the table every Thanksgiving, but I do not recall every actually trying it. Having a child with a severe milk allergy and avoiding gluten and dairy myself the past few years, the occasion to try it recently just has not come up.

Our kids love it when I make Mini Pancake Muffins for breakfast. They're delicious and fun. Since it is such a simple and versatile recipe, I decided to try something a little different using the same ingredients. With the slight hint of maple flavor and the soft, not-too-sweet pancake texture, I decided they needed a little addition of coffee and bacon. These are fun and sophisticated at the same time. What could be better?!

When it comes to cookies, oatmeal have always been my favorite. Not the kind with raisins, chocolate chips, or any other additions mixed in. Soft and chewy, warm and filled with spicy cinnamon...yep, those are the best kind.

However, as much as I love to mix different flavors and textures together, it is fun to experiment with an old favorite on occasion. This recipe stemmed from my new-found love of dark chocolate and tart dried cherries. Add that to my love of oatmeal cookies and this recipe has quickly become one of my all-time favorites!

Vanilla Pudding Pops {vegan + gluten free}

I usually make pops of some sort every summer. This year we have been trying out some new store-bought versions (see: Dreyer's Outshine Fruit Bars - yum!) and haven't made any from scratch yet. Instead of going with my usual recipes, like my Cookie Dough Popsicles, Fudgesicles or Strawberry Banana Ice Pops, I decided to transform my Chocolate Pudding recipe to a vanilla version, then turn it into pops. Delicious as they are plain, they're even better with a drizzle of chocolate that mimics Magic Shell. These Vanilla Pudding Pops are a perfect summer treat!

When first learning your child has a food allergy, milk in our case, the task of finding foods they can enjoy just as other children do seems daunting. I think a lot of parents go through the motions of realizing their kids may never be able to enjoy the treats they may have enjoyed during their own childhood. Everything seems to revolve around food, like treats after ball games or cake and ice cream at birthday and holiday parties.

Roll-out Sugar Cookies {top 8 + gluten free}

Growing up, my mom's sugar cookies were one of my favorite treats. I remember making them at Easter, Halloween and Christmas with all of the cute holiday cookie cutter shapes we could find. They were this perfect, almost buttery consistency. Not too soft and not too crunchy, topped with a sweet and simple glaze of icing.

I haven't been able to enjoy those delicious cookies for awhile now, so I decided to use her recipe to create a version our whole family could partake in. With a few substitutions to make it dairy-, gluten-, and egg-free, all I had to do was use safe and trusted brands that are soy- and nut-free as well. Making this roll-out dough gluten-free proved to be a little tricky, but after adjusting the flour measurements, they were the perfect consistency.

Strawberry Lemonade Cupcakes {dairy + gluten free}

It's been quite some time since I've posted a new recipe here. My apologies for not being on the ball this spring. We've been swamped lately and it seems as though I'm constantly throwing meals together as quickly as possible in an effort to get out the door almost an instant after we've just gotten home.

Perfect Cinnamon Rolls {top 8 + gluten free}

While I thought I'd found my favorite dairy-free, gluten-free cinnamon roll recipe awhile ago, I decided that anything can be improved. So I set to work trying to perfect it. It can be tricky to get gluten-free baked goods to come out perfect. They're often too dense or crumbly. It took several failed attempts and many taste-testing sessions, but it's finally just right!

Pumpkin Cinnamon Rolls {Gluten Free & Vegan}

I have tried so many times to come up with the perfect cinnamon roll recipe without gluten, dairy or eggs. It's been a struggle at times, but I finally discovered it last spring. That recipe called for ripe bananas as an egg replacer. However, during the fall, I like to use pumpkin puree instead. These rolls don't really have a pumpkin flavor to them, but the flavor they do have is perfect combined with my Maple Icing.

Chocolate Brownie Cookies {Dairy, Egg, Soy & Gluten Free}

This is a recipe I've been wanting to share for awhile. Boy, am I glad I did.  I'm not much of a chocolate lover, but these are really good anyway.

Here is a fun idea: bake these cookies to serve to your friends. After they've enjoyed the cookies, ask them if they can guess the secret ingredient. Chances are they'll have no idea!

Chocolate Brownie Cookies {Dairy, Egg, Soy & Gluten Free}

1 can black beans, drained and rinsed really well (no salt added if you can find them)
2 Tbsp olive oil
2 Tbsp almond milk (or other dairy-free milk)
1 Tbsp + 2 tsp almond butter (or other nut butter)
3/4 cup sugar
1/4 cup unsweetened cocoa
3 Tbsp coconut flour
1 tsp baking powder
1 tsp vanilla extract
pinch of cinnamon
pinch of salt
1/3 cup Enjoy Life Foods mini chocolate chips (optional)
1 cup powdered sugar 

Preheat oven to 350 degrees and line a baking sheet with parchment paper. 

In a high-powered blender or food processor, combine black beans, oil, almond milk and almond butter. Blend until smooth. Add remaining ingredients (except for chocolate chips) and blend until combined. Fold in the chocolate chips last. 

Using a cookie scoop, scoop dough into 1 1/2 inch round balls. (If desired, roll dough balls in powdered sugar for a crinkle coating.) Bake for 13-15 minutes. Remove from oven and allow to cool for two minutes before transferring to a wire cooling rack.
