Frozen Peanut Butter Pie {gluten free + vegan}

Blackberry Hand Pies (gluten free + vegan)

I'm just loving blackberries at the moment. My littlest kiddo is a fan of just about any fruit, but blackberries, raspberries and blueberries are definite favorites. If he even catches a glimpse of them, he starts saying "apple, apple, apple" (he calls everything "apple" right now) and will throw a fit if he doesn't get them. Needless to say, it is difficult to keep any of them around the house for very long. This child would eat a pint of berries in one sitting if I would let him!

Peach Blackberry Pie {gluten free + vegan}

I'm loving the end of summer, fresh, ripe fruit I can find in our local grocery stores these days. Fresh Colorado peaches everywhere! I decided I couldn't pass them up and was craving a peach pie something fierce. But my newest love when it comes to fruit is blackberries. I found some organic blackberries on sale and had to have them too.

Mini Lemon Tarts {dairy + gluten free} with optional egg free version

Still on my lemon and pie kick from the last post...I've always been intrigued by lemon curd. While I've used the store-bought stuff plenty of times, I really wanted to try making my own. Boy was that a fantastic idea. Have you ever tried homemade lemon curd? It's AH-MAZ-ING. So delicious and much better than the kind you can buy in a can or jar. Like, eat it with a spoon good.

Lemon Cream Pie {top 8 + gluten free}

It is beginning to feel like spring around here, though I can't complain too much as our winter has been very mild compared to typical Midwestern winters. I have all things spring on the brain too, so it has arrived at the perfect time! I don't often go all out with decorating around the house for specific holidays, but more for the season. Although I've picked up quite a few cute items from Target so there are a few bunnies around for the time being!

Grasshopper Pie {gluten free + vegan}

My apologies for being a little M.I.A. since around Christmastime, but thank you for hanging in here! What started as a fun winter/holiday break quickly turned into a sickness-filled couple of weeks for our little family. Shortly after the new year began, we found out that we are expecting! Our family of four will be a family of five in early September and we are SO excited!

I have felt pretty awful for the most part these past few months, but I am thrilled to say that I am (finally) regaining my energy and not feeling sick as often. Just in time for spring - thank goodness!

Chocolate Cream Pie {gluten free + vegan}

Last year for Christmas, I made an absolutely delicious old-fashioned Chocolate Cream Pie to mix things up from the traditional pumpkin, pecan, or apple pies. The recipe, adapted from King Arthur Flour really turned out deliciously. It was such a hit that I decided that I would make that same recipe each year from now on.

Pumpkin Pie {gluten free + vegan}

Pumpkin Pie is one of those classic necessities that just rounds out any Thanksgiving feast. As a teenager, my mom and I spent quite some time trying to create the perfect pumpkin pie, from crust to filling. We finally came up with our favorite one and it has been a staple each year since then. But what happens when you can no longer eat the pie you made because the crust contains gluten, or you cannot share it with your child because it contains milk and they are allergic? Why, you adapt it of course!
