Champagne Gelatin Squares {dairy + gluten free}

How will you be ringing in the new year tonight? We're spending time with family and I'm sure the night will be filled with games, laughter, and plenty of delicious food. I know that gelatin snacks are usually a treat for kids or something that reminds you of your college days...but I decided they can also be a fun, classy (adult) treat too. These Champagne Gelatin Squares will be coming along this evening for the adults to enjoy!

Champagne Cupcakes {dairy + gluten free}

Happy New Year's Eve! If I'd planned better this week, I would've had this recipe up with a few extra days to spare, but time got away from me! The good news is, this recipe calls for ingredients that most of us probably already have on hand! If you're a fan of my Strawberry Cupcakes, this is a very similar recipe, except the liquid is replaced with champagne - perfect for today!

Sparkling Pear Sangria

One of our favorite things to do when the weather warms up is having our friends and family over, grilling out, and enjoying good food and each other’s company. It has been a usual occurrence since my husband and I began dating, with me making a last minute plan to have everyone over and him putting up with agreeing with me. I always seem to have a theme in mind also. We've done many a seafood boil and we host a pumpkin carving party every fall.

No matter the theme or my vision, we're usually firing up the grill for some delicious dishes. One bonus about grilling out is not heating up the entire house with a hot and overworked oven! One of our recent favorites is ribs. It all started last Labor Day weekend when my husband wanted to try and cook some ribs the day before our little man was due to arrive. Not only were the ribs delicious, but little baby Dawson must've thought so too because I went into labor just a few hours later! :)

Since then, my husband purchased a smoker and we have enjoyed delicious ribs and other meats many times since then. One perk of living as near as we do to Kansas City is all of the delicious food options nearby. Kansas City is famous for its BBQ and we sure do love it! Even so, it is nice to be able to easily recreate that delicious BBQ in the comfort of our backyard at times.

Easy Party Food: Foster Farms Gluten Free Corn Dogs

During my pregnancy, one of the foods I found that I couldn't tolerate was pork. In any form. If I ate pork at all, I felt absolutely awful for the entire rest of the day. It only took a couple of occurrences to determine what was causing me to feel terrible, so I would try and drink as much water as possible and just do my best to sleep it off. After the first couple of times this happened, I just avoided pork completely through the rest of my pregnancy.

Spinach Artichoke Dip {gluten free + vegan}

I have always been a fan of spinach artichoke dip. Warm, gooey and cheesy, it is a delicious appetizer or perfect compliment to grilled or baked chicken. I have enjoyed the traditional version since my son's milk allergy diagnosis, but have anxiety any time I eat something that contains his allergen. Plus, I recently decided to cut dairy out of my diet again, so this dairy-free version is a fantastic substitute.

Some of my favorite, go-to brands make an appearance in the recipe too: So Delicious Dairy Free (culinary coconut milk), Go Veggie Foods (vegan Parmesan style topping), and Just Mayo (egg-free mayonnaise). If you have a favorite dairy-free cheese alternative that does not contain soy, feel free to replace the Parmesan with what works for you.

We are busy planning our menus a couple of months in advance in order to test recipes again and again to make sure they are just perfect before sharing them with you, our faithful readers.

As a "food allergy mom," preparation is key for me to keep up with all of the random, last minute events that pop up when food may be required. I like to make up a batch of cupcakes and freeze them (with or without frosting) for just such occasions. Birthday parties out or at school are the typical events, but now we have parties at school to include as well. Thankfully, Mason's teacher has a refrigerator/freezer in the classroom, so I am able to send a few ready-made cupcakes to keep there "just in case."

I love apple cider. Hot or cold, it is the perfect, spicy, fall drink. My little one loves apple cider too, but his big brother, not so much. I decided I would make a bubbly punch using apple cider that all of the kids would enjoy, whether they share our love of cider or not. All of the kiddos at our Pumpkin Carving Party loved this punch!

Pumpkin Carving Party {2014}

It has become a tradition in our family to have a Pumpkin Carving Party each fall a few weeks before Halloween. I LOVE this holiday, so hosting this is one of the highlights of fall for me. I always make my delicious chili recipe (which my husband keeps under lock and key...well, almost) and we have lots of fun fall treats to go along with it. Everyone brings their own pumpkin and we spend the afternoon carving, then enjoy dinner together. (This year was even capped off watching the Kansas City Royals win yet another playoff game - EEK! It's been nearly 30 years since this last occurred, so the buzz created by this is really a big deal!)
