Banana Bread {gluten free + vegan}

In the past I was never really a big fan of banana bread, probably because it traditionally contains walnuts (which I strongly dislike). My boys used to eat bananas like they were going out of style. However, they usually decide at some point that they're banana'd out and just stop eating them. Annnd, it's almost always just after I've bought a bunch for the week. I typically try and wait them out for a few days to see if they'll change their minds, but when they start to get over-ripe, I just toss them in the freezer to use later on. 

I've used our frozen, ripe banana stash for all kinds of recipes from cinnamon rolls to no-churn ice cream ("nice" cream, I suppose). I am not sure exactly at what point I realized that banana bread doesn't have to contain walnuts. But praise the Lord I did because now I love banana bread! If you are like me and just want to savor the warm, cinnamon-y, enveloping aroma and flavor of banana bread, this recipe is for you!  

(Note: I've edited this recipe from its original version to remove the eggs and added peanut butter. You could totally omit the PB if you prefer. Both ways are equally delicious.)

Grilled Marinated Salmon {dairy + gluten free}

I love quick and easy grilling recipes that taste so good it's hard to believe they are healthy too. We have been super busy lately and our evenings are hectic. I've been missing sitting down to dinner together as a family and enjoying good food and each other's company. We're nearing the end of baseball season so hopefully we'll have a bit of a break in the activities for a few weeks or so.

Our boys have started to become a bit pickier lately, but thankfully they still enjoyed this salmon, as it used to be a favorite. Buying salmon, especially wild-caught instead of farmed salmon can get really costly here in the midwest so I don't tend to make this recipe too often. But every time I do, it never fails that someone in the family wishes we'd have it more often!

I love making Christmas a special time for my boys. We do lots of activities on Christmas Eve, including sprinkling reindeer food outside, leaving our magic key for Santa to get into the house, and our Elf on the Shelf, Teddy always leaves them a special gift. Teddy didn't show up this year though. Apparently he knew that his shenanigans would be too stressful for us with a new baby in the house or something. ;) 

In the past I've always made pancakes or coffee cake for breakfast on Christmas morning, and felt rushed to prepare and bake that early while the gift-unwrapping is occurring. A couple of years ago, I decided to make something for breakfast in advance so that I could just pop it in the oven first thing and enjoy the rest of the morning with the boys rather than standing over the stove the whole time.

Apple Pie Pizza {gluten-free + vegan}

When faced with a boxed pizza crust mix, the logical thing to do would be to make a savory pizza recipe with it. I plan to, but first I knew I wanted to recreate a dessert pizza that I remember from my childhood. Enjoy Life Foods Pizza Crust Mix has enough of a neutral flavor that it works well with both savory and sweet toppings. Because I added so much in the way of sweet toppings, it actually helped to not have a sweet crust underneath.

Peppermint Bark Puppy Chow {gluten free, vegan + nut free}

Puppy Chow (or Muddy Buddies) has always been a favorite treat in our family. I like to mix up the flavors for special occasions or holidays. Traditionally, Puppy Chow is made with peanut butter, but I think it works just fine and tastes great with just a chocolate coating.

Since I found Premium Chocolatiers Milkless Polar Dream dairy-free white chocolate bars, I knew I wanted to make a peppermint bark version of puppy chow. Perfectly sweet and crunchy, the minty mixture of dark chocolate and white chocolate with peppermint is amazing!

Spinach Artichoke Dip {gluten free + vegan}

I have always been a fan of spinach artichoke dip. Warm, gooey and cheesy, it is a delicious appetizer or perfect compliment to grilled or baked chicken. I have enjoyed the traditional version since my son's milk allergy diagnosis, but have anxiety any time I eat something that contains his allergen. Plus, I recently decided to cut dairy out of my diet again, so this dairy-free version is a fantastic substitute.

Some of my favorite, go-to brands make an appearance in the recipe too: So Delicious Dairy Free (culinary coconut milk), Go Veggie Foods (vegan Parmesan style topping), and Just Mayo (egg-free mayonnaise). If you have a favorite dairy-free cheese alternative that does not contain soy, feel free to replace the Parmesan with what works for you.

White Chocolate Nog Fudge {dairy, egg, gluten + nut free}

Fudge is one of those traditional Christmas treats that just have to be made every year. Unfortunately most fudge recipes contain some if not all of our allergens. This year, I set out to make an allergy-friendly version that my little one and I could enjoy along with everyone else who would never even know the difference.

I love the variety of So Delicious Dairy Free holiday drinks that are abundant this season. The delicious Nog is a fun and sweet treat. I have used it in previous years in breakfast recipes for Christmas morning, like my Nog French Toast Bake. I decided this year to try it in a dessert recipe as well.

Last Christmas, these Ginger Molasses Cookies were my absolute favorite. The rich molasses and ginger flavors meld together perfectly. I love that these cookies are not overly sweet. I adapted my recipe this year to be egg-free, as well as being free of the other top allergens!

Pumpkin Pie is one of those classic necessities that just rounds out any Thanksgiving feast. As a teenager, my mom and I spent quite some time trying to create the perfect pumpkin pie, from crust to filling. We finally came up with our favorite one and it has been a staple each year since then. But what happens when you can no longer eat the pie you made because the crust contains gluten, or you cannot share it with your child because it contains milk and they are allergic? My kids are lovers of simple "kid" foods. Fish sticks, chicken nuggets, and corn dogs especially. We do keep these items on hand, but they are well aware that they do not get to indulge in these items on a very regular basis. However, it is nice to have something quick and easy on hand for those evenings when we have to eat and run.

As soon as the weather begins to turn cool, my boys start asking for hot cocoa every time they come in from playing outside. I usually cook up a saucepan of cocoa with almond milk on the stove on snow days or weekend days when I have some extra time. Halloween evening was one chilly night here, so we enjoyed our first hot cocoa of the season.

I have the Wilton brand pan that makes six donuts at a time, but this one that has 12 spots would be so much better. I may have to get it too!

Roll-out Sugar Cookies {top 8 + gluten free}

Growing up, my mom's sugar cookies were one of my favorite treats. I remember making them at Easter, Halloween and Christmas with all of the cute holiday cookie cutter shapes we could find. They were this perfect, almost buttery consistency. Not too soft and not too crunchy, topped with a sweet and simple glaze of icing.

I haven't been able to enjoy those delicious cookies for awhile now, so I decided to use her recipe to create a version our whole family could partake in. With a few substitutions to make it dairy-, gluten-, and egg-free, all I had to do was use safe and trusted brands that are soy- and nut-free as well. Making this roll-out dough gluten-free proved to be a little tricky, but after adjusting the flour measurements, they were the perfect consistency.

Chocolate Chip Cookie Dough Bites {dairy, gluten + egg free}

Over a year ago, I discovered a delicious treat from The Girl Who Ate Everything called "Healthy Peanut Butter Bites." (Check out the original recipe here.)

With a few adaptations to meet our dietary needs, this has become one of my favorite, quick and healthy snack items. I call them Chocolate Chip Cookie Dough Bites. They taste SO much like cookie dough, it is just like the best part of making chocolate chip cookies (next to the amazing way your house smells when baking...) - sneaking some of the batter!

Coffee Cake Muffins {dairy, gluten + egg free}

Prior to Easter, I was super ambitious and had planned to share all of our brunch recipes before "the" day. But the hustle and excitement that naturally comes with holidays caused me to fall a little bit behind. The silver lining is that the recipes are absolutely perfect for any day of the week!

When I was a kid, my mom made the BEST coffee cake, mostly on the occasional Sunday morning. It was fluffy and warm with just the right amount of sweet brown sugar topping. I've wanted to recreate it forever. These coffee cake muffins are perfectly soft, not too sweet, and topped with a warm cinnamon sugar crumble. Enjoy them straight from the oven or reheat them for a quick on-the-go breakfast.
