Hearty Chili (dairy + gluten free)

Years ago, my husband and I watched cooking shows on TV almost religiously. When we still had cable, it was on Food Network just about constantly. One night we happened to be watching a chili cookoff and started talking about how we'd make the "perfect" chili recipe. This recipe was born almost immediately afterward and has been made more times than we can count.

Grilled Chicken Fajita Kabobs {dairy + gluten free}

I really find that when we're in the throes of summer and heading toward the start of the new school year, I start to slack off a little on meal planning. We have gotten into a bad habit of going out to eat frequently which throws off our whole weeknight routine.  I have a list of typical meals that I can throw together the night before so we can have a quick dinner the next evening, but sometimes even those recipes get a little old. 

Combine that with my desire to stretch grilling season out as long as possible so as not to heat up my kitchen, and these quick, grilled, kabob meals are my new go-to. Just like our Hawaiian Pork Kabobs or our Shrimp Boil Kabobs, these have quickly become a new favorite around here!

Spinach Artichoke Dip {gluten free + vegan}

I have always been a fan of spinach artichoke dip. Warm, gooey and cheesy, it is a delicious appetizer or perfect compliment to grilled or baked chicken. I have enjoyed the traditional version since my son's milk allergy diagnosis, but have anxiety any time I eat something that contains his allergen. Plus, I recently decided to cut dairy out of my diet again, so this dairy-free version is a fantastic substitute.

Some of my favorite, go-to brands make an appearance in the recipe too: So Delicious Dairy Free (culinary coconut milk), Go Veggie Foods (vegan Parmesan style topping), and Just Mayo (egg-free mayonnaise). If you have a favorite dairy-free cheese alternative that does not contain soy, feel free to replace the Parmesan with what works for you.

We are busy planning our menus a couple of months in advance in order to test recipes again and again to make sure they are just perfect before sharing them with you, our faithful readers.

I don't know that I have ever really liked green bean casserole. I remember it being on the table every Thanksgiving, but I do not recall every actually trying it. Having a child with a severe milk allergy and avoiding gluten and dairy myself the past few years, the occasion to try it recently just has not come up.

Chicken + Spinach Fettuccine Alfredo {dairy + gluten free}

Creamy, delicious Alfredo sauce epitomizes comfort food for me. Since Mason's dairy-allergy diagnosis, I have only made Alfredo a handful of times, typically making a separate, dairy-free meal for him. Over the years, I have grown increasingly uncomfortable with cooking with milk products due to cross-contamination issues that can easily happen in the kitchen. Whenever I have used milk, cheese or other dairy in cooking, my anxiety skyrockets.

When I was pregnant with Mason, eating eggs made me sick. Eggs had been a staple in my diet for years and I had them for breakfast or dinner a few times a week. When Mason was just under a year old, we found out he was allergic to eggs, which meant they were gone from our house entirely for awhile. He outgrew his egg allergy at 22 months but it took me awhile to feel comfortable adding them to my grocery list very often.

Kale Pesto and Crispy Chicken Thighs {dairy + gluten free}


I've never been a big fan of pesto. Don't get me wrong...I want to like it. I just haven't found one that I actually enjoyed eating. I decided to try making my own dairy-free version using Go Veggie Foods Dairy-free Parmesan Style Topping since it tastes exactly like regular parmesan. (Make sure it is the purple tub that says "dairy-free" not the green one that is only lactose free and still contains milk proteins.) I also love kale and I think it was perfect for my new version of pesto, which I really enjoyed by the way!

They had a dairy-free cream cheese frosting and cute little Easter embellishments. This year I wanted to do something slightly different, so I recreated that recipe with a little bit of a twist!

Blueberry Oat Bars {gluten free + vegan}

Do you ever wonder if recipes that claim to be "exactly like" the original version of something you would enjoy at a restaurant are too good to be true? I do. Which is one reason I LOVE to try those recipes to find out for myself.

If you are gluten-free and are not following Gluten-Free on a Shoestring, you are missing out. I began following them on Facebook and loved seeing their drool-worthy photos of gluten-free baked goods. I haven't purchased the cookbook, Gluten-Free on a Shoestring Bakes Bread YET, but it is absolutely on my list to purchase in the near future.

Fiesta Grilled Chicken {top 8 + gluten free}

As a working mom, I hold myself responsible for making sure the daily lives of my kids (and our family as a whole) run smoothly - from getting to school and work on time to making it to every soccer practice, baseball game and after school activity. When I am able to get a fresh, healthy meal on the table, I feel as though I have accomplished a near-impossible feat. Lemon Herb Grilled Chicken {Dairy & Gluten Free}

About 10 years ago, I was scared to death to try and grill something on my own, especially chicken! The couple of attempts I'd made were not at all good and the chicken always ended up dry and flavor-less. I stumbled upon a recipe that looked so easy, it had to be too good to be true. But it wasn't! Between that recipe and a few gazillion Food Network cooking shows, I finally gave it a shot. It was, hands down, the best grilled chicken I had ever had (not just from my own cooking experiences).

I couldn't tell you now where I found the recipe, but I still use it 99% of the time. I love it because the marinade uses ingredients I always have on hand, and is very versatile.  It's also super easy to mix the marinade in advance, pop the chicken into it for about an hour, then toss them on the grill. I've even whipped up the marinade and taken it on camping trips in our cooler. Just keep the chicken in a gallon-zipper bag in the cooler, pour the pre-made marinade in, let it meld together in the cooler for awhile and then pop it on the grill. Such an easy and delicious main dish!

Lemon Herb Grilled Chicken 

Makes 4-6 servings                                                    Printable Recipe

2 lbs boneless, skinless chicken pieces (I've used both breasts and thighs with great results)
1 cup vegetable or olive oil
1-2 Tbsp minced garlic
1/4 fresh herbs, finely chopped (I like to use thyme, oregano, parsley & sometimes chives)
1/2 tsp salt
1/4 tsp pepper
Juice of 1 whole lemon

In a lidded container, whisk together all ingredients except for the chicken. Once combined, add the raw chicken and seal. Place the container in the refrigerator for 1-4 hours to marinade. (The outside of the chicken will turn slightly white. This is just because of the acidity of the lemon juice. It is actually a good thing as the acid helps to tenderize the meat!)

When you're ready to cook, preheat the grill to medium heat. Remove the chicken from the marinade and place it on the hot grill. Discard the remaining marinade. Grill for about 5-7 minutes on each side and until the chicken is cooked through. (Try not to overcook the chicken or it may become dry.)

Remove the chicken from the grill and cover with foil. Allow it to rest for 5 minutes before serving. Serve the hot chicken alongside some steamed or roasted vegetables, a baked sweet potato, or with gluten-free pasta or rice. Any of your favorite side dishes will go perfectly with this delectable dish!

Tip: I buy fresh herbs, finely chop them and lay them on paper towels to absorb any liquid. Then I place them (with the paper towel) in snack-size zipper bags and freeze them. These work great for cooking and you don't have to worry about using all of your herbs before they go bad.

I do the same thing with veggies like spinach, broccoli, cauliflower, kale, bell peppers and onions. This also makes it really handy for cooking quick dinners since these items are already prepped and only need a short time to thaw!

Raspberry Chipotle Shredded Pork (dairy & gluten-free)

Some time ago I bought a bottle of Raspberry Chipotle sauce in the condiment section of the grocery store, not really knowing what I was going to use it for. So I began experimenting. I usually don't measure when I'm making dinner, unless I'm creating a specific new recipe. I just throw in a little of this, a little of that, and then adjust as I go along. I'm going to do my best to give you some actual measurements here, but trust me when I say it doesn't matter. This is one of those recipes that you cannot screw up!
