Green Chile and Sausage Frittata (Whole30, Paleo, dairy-free, gluten-free)

If you've watched my Instagram stories this month, you've probably noticed I'm doing a Whole30 for the month of January. This will be my 6th completed round as of Jan. 31st. While I've attempted 9 Whole30s, a few of them were failed because I wasn't prepared or wasn't totally committed. 

At the beginning of 2018, I read It Starts With Food and it really opened my eyes to the scientific reasons behind the Whole30 program, how certain foods affect our overall health, and why we may not feel our best when we eat those foods. I committed to that round because it made perfect sense, and because I was sick and tired of feeling...well, sick and tired. 

In 2018, I completed four rounds of Whole30 successfully, lost 23.4 pounds and 18.5 inches overall. The inflammation in my body decreased significantly and my thryoid began functioning again...too well, in fact, and my 12 years of hypothyroidism/Hashimoto's turned hyperactive for a short time. I felt like myself again for the first time in a looooong time.

Roll-out Sugar Cookies (Vegan + gluten free)

Growing up, my mom's sugar cookies were one of my favorite treats. I remember making them at Easter, Halloween and Christmas with all of the cute holiday cookie cutter shapes we could find. They were this perfect, almost buttery consistency. Not too soft and not too crunchy, topped with a sweet and simple glaze of icing.

I haven't been able to enjoy those delicious cookies for awhile now, so I decided to use her recipe to create a version our whole family could partake in. With a few substitutions to make it dairy-, gluten-, and egg-free, all I had to do was use safe and trusted brands that are soy- and nut-free as well. Making this roll-out dough gluten-free proved to be a little tricky, but after adjusting the flour measurements, they were the perfect consistency.

Pfeffernusse Cookies (gluten + dairy free)

Every year at Christmastime during my childhood, we would get together one afternoon with our extended family. My great-grandparents, aunts and uncles, and cousins I only saw twice a year or so. I love the memories I have now as an adult from having known and spent time with my great grandparents.

Chicken with Spinach Mushroom Cream Sauce (Whole30, paleo, gluten-free, dairy-free)

Does anyone else feel like we went straight from Summer to Winter? Here in Kansas, we just had our second snow of the season and I am not ready for the cold weather yet! We are only a couple of weeks away from Thanksgiving and I haven't even started to plan our menu yet. We're traveling over the holiday week this year for a fun getaway with my family. Other than traveling to out of town relatives' houses, we don't often travel far from home during the holidays. So when I do get around to planning my recipes for Turkey Day, they'll either be make ahead or easy to throw together at the last minute. Thankfully we'll have a full kitchen where we're staying which makes life and traveling with food allergies so much easier.

When my little guy was diagnosed with his milk allergy at 7 months old, I was at a bit of a loss. I learned how to read ingredient labels and be diligent about the food I bought to feed him. Besides a few easy recipes, I didn't really know how to replace milk and other milk-containing ingredients in the majority of recipes I liked to use. I always loved to cook and bake so there was a definite learning curve I knew I had to conquer.

Easy Taco Chicken Spaghetti Squash Bowl (dairy-free, gluten-free, Whole30, Paleo)

I'm fairly certain I make some form of tacos on at least a weekly basis. Shredded pork, beef, chicken, ground beef, ground turkey...you name it, I'll make it into a taco salad, soft taco.... you get the idea. While I could probably eat tacos for every meal and be perfectly happy, I'm not sure my family feels the same way. Because of this, I've been trying to mix things up a bit and add some new options to our weekly meal plan.

Enchilada Stuffed Peppers (dairy-free, gluten-free, Whole30, Paleo)

Trying to find a happy medium between healthy, Whole30 friendly meals and things my children will eat without complaining seems a bit like a full-time job lately. I feel like I've gotten back into a really good routine with meal planning and prepping, and for the most part, meals have been well-received by the Hubs and these boys of ours. Although, our littlest is in this "I won't eat anything unless it comes on a wooden stick or in plastic packaging" phase right now. (I'm telling myself we'll make it through this stage soon without wishing away any of his cute little two-year old quirks.)

Oatmeal Peanut Butter Cookies (dairy + gluten free)

I've always been a fan of peanut butter cookies and oatmeal cookies. These Oatmeal Peanut Butter Cookies are the best of both worlds combined! I started making this recipe for my kids over five years ago. Though it has always been a recipe of very few ingredients, I've adapted it over the years to use certified gluten-free oats and coconut sugar so they still enjoy the cookies and I feel a bit better about what I'm feeding them.

Almond Crusted Chicken (dairy-free, gluten-free, Whole30, Paleo)

This recipe is one that I first began making for my family nearly five years ago. Each and every time it's been a hit. It also happens to fit into our meal plan perfectly this month. I'm doing a Whole30 and, by default since I'm the cook, the rest of the family is to some extent as well. This recipe is easy to make, healthy, real ingredients and so versatile you can serve it with any sides.

Guacamole (gluten-free, vegan, Whole30, Paleo)

My favorite dip/appetizer/topping for just about anything is, hands-down, guacamole. Any time we have food days at work or I need to bring a side dish to an event, I will always go for a big batch of guac with some chips alongside. It's kinda my thing.

German Chocolate Brownies (dairy + gluten free)

Growing up, I remember my mom making German chocolate cake and I was not a fan. I think it was because of the coconut and pecans mixed into the icing and I didn't really care for either of those ingredients. Now, I'm a HUGE fan of both coconut and pecans, so I'm all for some good German chocolate!  

I made this German Chocolate Brownie recipe to share with my co-workers. We have so many food days, it's a bit ridiculous - but fun and always delicious! This recipe is certainly and keeper and one I'll be making for pot-lucks and get togethers often.

Chocolate Dipped Cones (dairy-free)

This past summer and early fall, we got really bored with sitting around the house and, though the weather was hot, we found some really fun ways to keep busy and spend time together as a family. 

Our boys enjoyed throwing rocks in the river. Dawson especially loved watching the trains go by. We played at parks, visited the zoo, fed the ducks at a nearby pond, and went hiking. On occasion, we topped off all of our outdoor fun with a cold, ice cream treat. When you have a child with a severe milk allergy, going out and enjoying ice cream together as a family can prove to be very difficult. We don't have any dairy-free ice cream options so we usually have to first stop at the store and pick up safe ice cream before hitting the ice cream shop for everyone else.

This recipe has been a family favorite since I posted in originally 3 1/2 years ago. I especially love to make it when the weather starts turning crisp and it begins to feel like fall. This is the perfect warm, comforting breakfast or snack!

When I was in college, my roommate worked at a really upscale restaurant as a server. I would spend my evenings hanging out at the restaurant as she was about to end her shift and, while I was waiting, I would get to taste-test some really amazing desserts. Thus my love of creme brûlée was born.

Citrus flavors just scream "Summer" to me and I'm loving lime right now just about as much as I love lemon. This was a fun take on Key Lime Pie using minimal ingredients, vegan and gluten free, and very similar to a cheesecake dessert. While I love these Key Lime Squares, lemon, being my first love, will definitely be the next flavor I will make of this delicious dessert!

We are loving these fun summer days and hot summer nights. We've spent so much time swimming, playing outside until the sun sets, and just enjoying our time together. The midwestern heat is beginning to get the best of us though, and we've needed some new frozen treats to cool off with!
