Easy Taco Chicken Spaghetti Squash Bowl (dairy-free, gluten-free, Whole30, Paleo)

I'm fairly certain I make some form of tacos on at least a weekly basis. Shredded pork, beef, chicken, ground beef, ground turkey...you name it, I'll make it into a taco salad, soft taco.... you get the idea. While I could probably eat tacos for every meal and be perfectly happy, I'm not sure my family feels the same way. Because of this, I've been trying to mix things up a bit and add some new options to our weekly meal plan.

Enchilada Stuffed Peppers (dairy-free, gluten-free, Whole30, Paleo)

Trying to find a happy medium between healthy, Whole30 friendly meals and things my children will eat without complaining seems a bit like a full-time job lately. I feel like I've gotten back into a really good routine with meal planning and prepping, and for the most part, meals have been well-received by the Hubs and these boys of ours. Although, our littlest is in this "I won't eat anything unless it comes on a wooden stick or in plastic packaging" phase right now. (I'm telling myself we'll make it through this stage soon without wishing away any of his cute little two-year old quirks.)

Almond Crusted Chicken (dairy-free, gluten-free, Whole30, Paleo)

This recipe is one that I first began making for my family nearly five years ago. Each and every time it's been a hit. It also happens to fit into our meal plan perfectly this month. I'm doing a Whole30 and, by default since I'm the cook, the rest of the family is to some extent as well. This recipe is easy to make, healthy, real ingredients and so versatile you can serve it with any sides.

Guacamole (gluten-free, vegan, Whole30, Paleo)

My favorite dip/appetizer/topping for just about anything is, hands-down, guacamole. Any time we have food days at work or I need to bring a side dish to an event, I will always go for a big batch of guac with some chips alongside. It's kinda my thing.
