Grilled Fresh Vegetables


Grilled Fresh Vegetables
Makes approximately 6 servings
  • 1 1/2 purple onion, sliced thick 
  • 2 red bell peppers, sliced thick 
  • 2 yellow bell peppers, sliced thick 
  • 2 medium or 3 small zucchini squash, sliced lengthwise into strips or spears 
  • 1 bunch green onions 
  • Olive oil spray 
  • Garlic salt, Italian seasoning, or other preferred seasoning 
Wash and slice vegetables in advance. Preheat grill to medium heat. Spray veggies with olive oil spray. Using heat-proof tongs, place veggies on grill, either directly on the grates or in a grill pan. Season with garlic salt or other seasoning.

Grill for about 8 minutes, or until veggies are tender crisp and have grill marks, turning halfway through. Remove veggies from grill and place on a platter. Cover with foil until ready to serve.

Brussels Sprouts, Pear and Candied Pecan Salad {dairy + gluten free}

It's not too late to add another yummy side dish to your Thanksgiving menu. Light and full of flavor, this salad is filled with fall flavors like pear and candied pecans. I've been enjoying this salad as a main dish for lunch the past few days and it is so good!

But if you're at all like me, I often find myself scrambling to throw things together at the last minute. I also like to put a spin on traditional recipes whenever possible. This recipe solves both of those issues for me.

Sweet Stir-fry Chicken + Veggies {dairy + gluten free}

Do you ever feel like you make the same three meals on repeat and need a menu revamp? I feel that way frequently and find myself trying to come up with loads of new meal ideas and then blow my budget on all of the ingredients to put just a few of them together. 

When I can sit down and make a meal plan, then make my grocery list from that, I feel like my life is so much more organized. But I have learned through the years that I really need to pick one new meal idea each week or even every other week, then stick to tried and true, easy to throw together, family favorites the rest of the time. This revelation has truly changed the way I grocery shop, and even the way I cook. I can easily swap certain ingredients for others which mixes it up just enough to feel different and not blow my budget. 

Some of our usuals that are easily interchangeable:
  • Mexican (soft or crunchy tacos; fish tacosshredded pork quesadillas, nachos or taco salads)
  • Italian (spaghetti, lasagna, goulash, chicken alfredo, pizza casserole, pizza bites)
  • Meat/Veggie/Starch (all roasted on a pan in the oven, or slow cooker meals are my fave!)
    • chicken/brussel sprouts/sweet potatoes
    • chicken/broccoli and cauliflower/rice
    • smoked sausage/peppers and onions/roasted potato wedges
    • pork loin/green beans or asparagus/mashed potatoes
  • Sandwiches (pulled pork, shredded chicken, sloppy joes, or burgers)
  • Grilled kebabs/kabobs in warmer weather (Hawaiian pork, shrimp boil, chicken fajitas, steak)
The best part about any of these meal ideas is that you can really just pick up whatever protein, vegetable, and starch or sauce you feel like having, and make any one of these meals on a whim. I like to stock up on marinara sauce, gluten free noodles, rice, tortilla chips, and any other ingredients that I use for sauces to just have on hand at any moment. Then I pick up meat when it is on sale and throw it in the freezer. Then I really just have to make sure I have fresh produce to go with everything else. 

Having this plan in place has really helped to cut back on the amount of money I spend at the grocery store, as well as the number of trips I have to make. I usually make one monthly trip to specialty stores to pick up all of our dairy free cheeses, butter, and specialty gluten free products that aren't sold at every store. I make one trip to Aldi or shop the sales at my regular store for pantry items and meat. 

Then I just have to make a run for produce and anything that I feel like grabbing on my weekly/bi-weekly shopping trip. I also build days into our menu to go out for dinner, or when we're just sticking with leftovers or doing a "fend for yourself" night to give myself an occasional break from cooking. 

One of the other easy ways to switch up flavors is to add a sweet and savory sauce to your meat and veggies. This Sweet Stir-fry Chicken and Veggies recipe has been a family favorite for many years. It's fast and delicious, and the kids just love it. Most of the ingredients are things I always have around and can just throw together quickly on a weeknight.

Spinach Artichoke Dip {gluten free + vegan}

I have always been a fan of spinach artichoke dip. Warm, gooey and cheesy, it is a delicious appetizer or perfect compliment to grilled or baked chicken. I have enjoyed the traditional version since my son's milk allergy diagnosis, but have anxiety any time I eat something that contains his allergen. Plus, I recently decided to cut dairy out of my diet again, so this dairy-free version is a fantastic substitute.

Some of my favorite, go-to brands make an appearance in the recipe too: So Delicious Dairy Free (culinary coconut milk), Go Veggie Foods (vegan Parmesan style topping), and Just Mayo (egg-free mayonnaise). If you have a favorite dairy-free cheese alternative that does not contain soy, feel free to replace the Parmesan with what works for you.

Mashed potatoes were always present at Thanksgiving meals when I was growing up. While I still think they are delicious and make dairy-free versions of my own on occasion, and the boys really like them, we also happen to love sweet potatoes. For this Thanksgiving, I wanted to create something sweet and savory with the decadence only sweet potatoes can provide. I don't know that I have ever really liked green bean casserole. I remember it being on the table every Thanksgiving, but I do not recall every actually trying it. Having a child with a severe milk allergy and avoiding gluten and dairy myself the past few years, the occasion to try it recently just has not come up.

Steak + Pepper Stir-fry {dairy + gluten free}

This is a quick and flavorful stir-fry that works perfectly using my Grilled Balsamic Steak recipe. Throw the marinade together in the morning and when you get home from work, cook the vegetables quickly while the meat is grilling. You'll have a delicious, easy weeknight dinner in less than 20 minutes! My kids and husband like to wrap the meat and veggies up in tortillas like fajitas.

Broccoli Salad {gluten free + vegan}

One of my favorite things to do during the summer is grilling out with friends. Of course, tons of food is always involved. I love to lighted things up with a cold summer veggie salad. This dressing is one of my favorites as well. It is perfectly sweet and tangy, creamy and delicious. It is amazingly versatile too. You can use just broccoli and onion, or add other vegetables like cold peas, cauliflower, or cherry tomatoes. Topping with cooked, crumbled bacon, or shredded dairy-free or regular cheese before serving would be delicious too!

Summer Corn Chowder {Gluten Free & Vegan}

I have been intrigued by Panera Bread's Summer Corn Chowder. Unfortunately it is full of dairy and gluten and does not meet our dietary needs. So I decided I would make my own safe version. Most of the similar recipes I found included a base with cream, butter and flour. I instantly knew that I could recreate a creamy texture with So Delicious Culinary Coconut Milk.

The culinary coconut milk is an 11-ounce container formulated to work in recipes calling for a 14-ounce can of coconut milk, so if you can't find the So Delicious Dairy Free version, just use a can of full-fat coconut milk instead. There is also a Lite version that contains the same ingredients but has a lower calorie and fat count. I like the thickness of the Original and this chowder is filled with so many veggies, that it doesn't pack a ton of calories to begin with.

Summer Corn Chowder {Gluten Free & Vegan}

1 Tbsp olive oil
1/2 small white onion, diced
1 medium bell pepper, diced
1 medium zucchini, diced
2 cloves garlic, minced
1 tsp each fresh thyme, oregano, and chives, finely chopped
3 cups stock
3 ears sweet corn, kernels removed from cobs
2 small-medium yellow potatoes, diced
1 container So Delicious Original Culinary Coconut Milk
Salt & pepper to taste

In a 3-quart saucepan, heat olive oil over medium. Add onion, bell pepper, zucchini, garlic, and herbs. Saute until vegetables begin to soften and become translucent. Add stock and bring to a boil.

Reduce heat and simmer for 10 minutes. Add corn, potatoes and Culinary Coconut Milk.

Simmer for another 20 minutes, or until the potatoes are fork tender. If you want a thicker base, lightly mash the potatoes. Add salt and pepper to taste.

I love to sprinkle in a few crushed red pepper flakes and enjoy this sweet and savory chowder with a side of cornbread muffins.
