Root Beer Float Cupcakes {dairy + gluten free}

One of my favorite summertime treats as a kid was a root beer float. I finally was able to share my love of them with my little guy a couple of years ago (I hadn't really thought of doing it sooner) and he loved it. Now he asks for them all the time.

Mint Chocolate Chip Cupcakes (dairy + gluten free)

It's birthday week! Or.... really just an excuse to make cupcakes. ;)

I always try and create a new cake/dessert recipe for my birthday, because no one else in this house is making me a cake, and buying one really isn't much of an option. Last year it was these amazing strawberry cupcakes, that are probably my favorite ever. I posted the question on my Facebook page about what flavor I should try this year, and as soon as I read "Mint Chocolate Chip" I knew that was it!

Champagne Cupcakes {dairy + gluten free}

Happy New Year's Eve! If I'd planned better this week, I would've had this recipe up with a few extra days to spare, but time got away from me! The good news is, this recipe calls for ingredients that most of us probably already have on hand! If you're a fan of my Strawberry Cupcakes, this is a very similar recipe, except the liquid is replaced with champagne - perfect for today!

Wild One! First Birthday Party

I'm only about ten days or so late posting this, but our sweet little Dawson turned one! He has such an awesome personality and fills every day with so much joy. He is absolutely the piece that completed our little family. I like to call him the caboose on our crazy train...because that's how I feel most days!

We celebrated his birthday a few days early since most of our family members had some free time over Labor Day weekend and it worked out perfectly! I'm pretty excited to have a kid with a warm weather birthday, since our other two have birthdays in December and January, and it's hard to do much outdoors with them. We still have really fun indoor parties but I have always wanted to plan a party with a camping theme.

Berry Bubbly Gelatin Bites

I really enjoy finding fun treats for the kids to enjoy that I feel better about during these candy-filled holidays. When I know they can have something healthy that is delicious and an out of the ordinary treat, it is a win-win for all of us! I created my Berry Fizz Mocktail recipe and then decided to make these gelatin treats to go along with our Valentine's brunch. 

Not only were they amazingly simple to make ahead of time, they're also super easy to modify for any holiday and flavor you want. You can also make them a grown-up treat by replacing the sparkling grape juice with champagne! :)

Strawberry Cupcakes {dairy + gluten free}

As a little girl with a birthday less than a week before Valentine's Day, I recall always wanting a strawberry birthday cake. I loved the pink Funfetti frosting that came with coordinating sprinkles and my mom even had the heart-shaped pan to make it super festive.

Although my tastes have changed some over the years, strawberry is still in my top five. I almost always end up making a cake or dessert of some sort for my own birthday (a blessing and a curse when you love to bake and a have restricte diets). Previous front-runners have included Strawberry Lemonade and Orange Creamsicle cupcakes. This year instead of trying something new, I decided to go back to basics and make one of my all-time favorites.

Happy Birthday to the tiny human who changed my life forever.

As I tucked my four-year-old into bed for the last time tonight, I reflected on our life together as I have so many times before.

From the first sounds of his heartbeat, to the flutters I felt when he first kicked. From the first strained, beautiful cries to our quiet moments alone in the hospital, me staring into his tiny angelic face.
