Healthy Meals for Busy Moms: Sun Basket Meal Kits

I love to cook. And bake. And grocery shop. I know that might make me a little strange, but between being a foodie and a food-allergy mom, I spend so much time planning meals around our dietary needs that are also unique and delicious, that I've grown to love every step. Yes, I am also that mom who does a little happy dance in the aisles when I find new-to-us, safe products.

But doing all of the shopping, prepping, and cooking takes time. Sometimes time that I don't necessarily have. Between work, sports, and everything else that keeps our lives hopping, it can be difficult to plan for really wholesome meals that can also be prepared quickly. All too often, we fall into the rut of convenience meals or "fend for yourself" nights. While I'm all for doing this on occasion, sometimes I feel like we're resorting to it too much.

I was talking with some friends at work about all of the meal delivery services available now. I love the idea of having all of my ingredients basically prepped and measured for me. But I was a little sad about the idea of not getting to grocery shop if I chose to use one of these services.

When I was given the opportunity from Moms Meet to try a couple of Sun Basket Meal Kits, I was thrilled. What better way to decide if this is something I want to commit to using? I did a little research on Sun Basket because, of course, I needed to be sure I was able to choose something that would be dairy-free and safe for my allergic kiddo. Not only do they feature healthy, organic, non-GMO produce and sustainably-sourced, hormone-free meats and seafood, the recipes are kid-friendly, can be made in 30 minutes or less, and are easy clean-up!

You can browse the menus for the week and select the ones you want to try. I chose the Turkey Tacos with Roasted Red Pepper and Cucumber Salsa and the Chinese Five-Spice Pork Stir-Fry with Cabbage and Red Peppers. My delivery arrived nice and neat in a box packaged with ice packs. I loved that all of the packaging materials are 100% recyclable too! Everything was clearly labeled and packaged so I knew which ingredients went with each recipe.

For the first night, we made the Turkey Tacos. The only dairy-containing ingredients were two toppings: organic Greek yogurt and queso fresco cheese. They were packaged separately and were something I could easily leave out of my milk-allergic son's portion. We set those ingredients aside so the dairy eaters of the family could use them last.

Most of us like a bit of spice and this recipe had just the right combination of spicy and cool, refreshing flavors. It felt and tasted super indulgent, but I felt great about it, knowing the ingredients were really healthy!

The next night, I made the Pork Stir-fry. We are also big fans of stir-fry and I usually just throw things together that I know will taste great and compliment each other. But I have never used Chinese five-spice and I loved the new experience of trying something I don't typically use. The stir-fry was delicious. My kids aren't huge fans of peppers and cabbage, but I am and ended up with leftover rice and veggies which I had for lunch the next day.

Another thing I loved? That the recipe book also clearly marked which ingredients in each recipe were dairy-free, gluten-free, Paleo-friendly, and other allergen-friendly. Plus, it included the rest of the week's recipes as well. I love getting new inspiration and that was the perfect way. All in all, we had a fantastic experience trying Sun Basket Meals. While it isn't something I'll do every week, I do like the idea of being able to plan for a home cooked meal and not have to worry about picking up all of the ingredients if I don't have time.
