Triple Chocolate Fudge Brownies {gluten free + vegan}

I recently had the opportunity to become a Rodelle Brand Ambassador. I have only seen their vanilla extract in my local stores, and it is one of my favorite brands to use in baked goods. After perusing their website and seeing all of the fantastic products they make, I knew I had to try the gourmet baking cocoa and organic chocolate extract (say what?!). Chocolate extract. Yum.

For Mason's birthday celebration a couple of weeks ago, we decided to make brownie sundaes. Rich, fudgy brownies, topped with So Delicious Dairy Free Vanilla Coconutmilk frozen dessert, chocolate sauce, cherries and sprinkles. We went all out and it was amazing. We loved the brownies so much that we made a second batch for his treat to take to school. We spread chocolate frosting over the top and added Christmasy sprinkles for a festive touch. 

You could absolutely make these brownies with vanilla extract, but I recommend trying out the chocolate extract if you can find it or purchase it online. It is fantastic. Between that and the bit of coffee added to the batter, it just takes the chocolate flavor up a notch (or ten). Between the rich flavor of the baking cocoa, the decadence of the chocolate extract, and the added mini chocolate chips, these brownies are a chocolate lover's dream. Plus they're super easy and quick to make if you need a delicious dessert in a hurry!

Triple Chocolate Fudge Brownies

Preheat oven to 350 degrees. Line a 9x13 baking dish with parchment paper and spray with nonstick cooking spray. 

In the bowl of a stand mixer, combine the gluten free flour, corn starch, baking cocoa, baking soda, and salt. Once combined, add the sugar, coffee, dairy free milk, oil and chocolate extract. Stir until just combined, then fold in the mini chocolate chips. 

The mixture will be thick. Spread into the prepared baking dish and bake for 35- 40 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool and cut into squares. Serve warm.
