Christmas Popcorn Snack Mix {gluten free + vegan}

One of our family favorite snacks has got to be our popcorn snack mixes. We love to create fun, festive mixes with treats we love. Our S'mores Popcorn Snack Mix and our Lucky Leprechaun Snack Mix are just two examples of some of the mixes we make. We always start with popcorn (either fresh popped and lightly salted, or Skinny Pop brand to save some time), then we add in sweet and salty treats from pretzels, to marshmallows, cereal, candy...whatever our hearts desire.

We were cooped up indoors this past weekend after a few inches of snow and below zero temperatures arrived just in time to make it feel like a white Christmas. On Saturday night, we snuggled up under warm blankets with a big bowl of this festive popcorn mix and watched Rise of the Guardians (sort of Christmas-themed, I guess). I love these moments when we can just settle in and enjoy each other's company when it feels like every day is more hectic than the last.

For this Christmas-y snack mix, we included a couple of new (to us) treats. We used Free2Be Foods Dark Chocolate Sun Cups (the Mint Cups would've been amazing!), and No Whey Foods ChocoNoNos. The Sun Cups added just a bit of saltiness along with the lightly salted popcorn, and the ChocoNoNos have a pretzel center that added just the right amount of crunch. Then we drizzled dark and white chocolate over top and let it set up. It's the perfect salty/sweet combo and is super addictive!

I've shared before that we love the milkless white chocolate bars from No Whey Foods, but this time around we tried out Pascha Chocolate's new Dairy Free Rice Milk White Chocolate Chips. So simple! They melted quickly and was the perfect addition to our snack mix.

Christmas Popcorn Snack Mix 

  • 5 cups lightly salted popcorn
  • 2 Sun Cups, chopped into chunks
  • 1 package ChocoNoNos
  • 1/4 cup dairy free chocolate chips
  • 1/2 tsp oil
  • 1/4 cup dairy free white chocolate chips
  • 1/2 tsp oil
Line a baking sheet or tray with parchment or waxed paper. Spread popcorn in an even layer. Scatter pieces of Sun Cups and ChocoNoNos, and any other desired toppings over the popcorn. 

In a small, microwave-safe dish, heat the chocolate chips for 30 seconds in the microwave. Stir and heat for another 15 seconds, continuing as needed until chocolate is melted. Stir in 1/2 tsp oil. In a second microwave-safe dish, repeat with the white chocolate chips and remaining 1/2 tsp oil. 

Drizzle melted chocolate and white chocolate over the popcorn and candy mix. Place tray in refrigerator for 15 minutes or until the chocolate is set. Break the mix apart into chunks and store in an airtight container.
