Champagne Gelatin Squares {dairy + gluten free}

How will you be ringing in the new year tonight? We're spending time with family and I'm sure the night will be filled with games, laughter, and plenty of delicious food. I know that gelatin snacks are usually a treat for kids or something that reminds you of your college days...but I decided they can also be a fun, classy (adult) treat too. These Champagne Gelatin Squares will be coming along this evening for the adults to enjoy! 

These are super simple to make, and only require a few ingredients. I made a pomegranate flavor, and another just champagne, but I used a pink champagne with hints of strawberry flavor. They are delicious!

Champagne Gelatin Squares {dairy + gluten free}

 For the champagne only flavor:
  • 1 1/2 cups sweet champagne of choice 
  • 1 1/2 cups water
  • 3 packets unflavored gelatin
  • sprinkles for topping (optional)
For the fruit flavor:
  • 1 cup champagne
  • 1 cup fruit juice (I used pomegranate)
  • 1 cup water
  • 3 packets unflavored gelatin 
  • sprinkles for topping (optional) 

In a saucepan over medium heat, combine all of the liquid, except reserve 1/2 cup in a medium bowl. Sprinkle the gelatin packets over the reserved 1/2 cup of liquid to bloom for a couple of minutes. Bring the liquid in the saucepan to a low boil. 

Carefully pour the hot liquid over the gelatin and stir gently until the gelatin is dissolved. Pour into an 8x8 glass dish and place in the refrigerator to set up. Before serving, cut into squares and top with sprinkles if desired. (Sugar sprinkles will melt with the moisture so save those until the very last minute.)
