Peaches + Cream Protein Ice Cream {gluten free + vegan}

I remember August always being the hottest month of the summer throughout my childhood. While our August started off hot, hot, HOT, the evenings have felt almost unseasonably cool. It is definitely getting me in the mood for fall, and we only have one week left before the kiddos go back to school! I know I say it every year, but I cannot believe how quickly time is flying by.

While I'm looking forward to fall and cooler weather, I want to enjoy these last few weeks of summer as much as possible. The fresh peaches in this ice cream really pack a summertime flavor punch. I've been slightly obsessed with peaches this summer already as evidenced by my Peach Bourbon BBQ Ribs, Grilled Peaches with dairy-free vanilla ice cream and caramel sauce, Peach Berry Frozen Yogurt Pops, and Peach Bourbon Cocktail recipes.

And because I always like to try and fit a healthy aspect into my recipes whenever possible, this ice cream is special because it's chock full of protein and fiber, and while being deliciously flavorful, it is also secretly healthy!

Peaches + Cream Protein Ice Cream {gluten free + vegan}

Ice Cream Base:
  • 3 cups coconut milk
  • 1-2 fresh peaches, pitted, diced and frozen
  • 1/2 cup vegan protein powder, vanilla flavor (such as Bob's Red Mill or Vega)
  • 1 Tbsp vodka (to keep it from hard-freezing; can be omitted but you'll have to thaw the ice cream longer without it for it to be scoopable)
  • 1 Tbsp psyllium fiber powder (optional)
  • 1 tsp vanilla extract
  • Peach Simple Syrup recipe
Peach Simple Syrup
  • 1 fresh peach, pitted and diced
  • 1/2 cup sugar
  • 1/2 cup water
Make simple syrup:
Combine diced peach, sugar and water in a small saucepan over medium heat. Bring to a boil, muddle the peaches slightly, leaving some in chunks. Stir until the sugar is dissolved. Remove from heat and allow to cool completely.

In a blender, combine the coconut milk, frozen peaches, protein powder, vodka, psyllium powder, and vanilla extract. Pulse until smooth. Pour the mixture into a freezer-safe container. Stir in the cooled Peach Simple Syrup until combined and cover. 

Place the covered container in the freezer for two hours. Remove from freezer and stir, then return to freezer for an additional two hours. Scoop into bowls or cones to serve. Top with crushed snickerdoodle cookies for an extra little crunch!
