Caramel Apple Blondies with Caramel Sauce {gluten free + vegan}

It's no secret that apples are one of my favorite ingredients to use in recipes during the fall. Just type in "apple" in the search box over there ---> and you will see!

I have tried on a couple of occasions to make a dairy-free caramel sauce that would work for dipping apple slices in, drizzling over ice cream, or adding to baked desserts for a gooey addition. I finally had the time and patience to develop the perfect sauce and I was super excited to find a use for it. I decided the first recipe I would use it for would incorporate all three.

Caramel Apple Blondies with Caramel Sauce {gluten free + vegan}

Caramel Sauce:
  • 1/2 cup brown sugar
  • 2 Tbsp dairy-free butter alternative
  • 2 Tbsp light corn syrup
  • 1/4 cup dairy-free vanilla creamer (or plain creamer plus 1/4 tsp vanilla extract)
  • 1/8 tsp baking soda
In a small saucepan over medium heat, melt together the brown sugar, dairy-free butter, and corn syrup. Stir until smooth. Add the baking soda and stir.

Bring the mixture to a boil. Add the creamer and turn heat down to medium low. Continue stirring gently for 6-8 minutes, or until the mixture reaches 240 degrees on a candy thermometer. Pour caramel sauce into a glass jelly jar. Allow it to cool completely, either at room temperature or in the refrigerator. (When ready to serve, you can heat the sauce in the microwave for 15 seconds to make it easier to drizzle.)
Caramel Apple Blondies:

  • 1 cup brown sugar

  • 1/2 cup dairy-free butter alternative, melted

  • 1/4 cup unsweetened applesauce

  • 1 tsp vanilla extract

  • 2 cups gluten-free all purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 gala apple, peeled, cored and finely diced

  • Preheat oven to 350 degrees. Spray an 8x8 glass baking dish with non-stick cooking spray.

    In a medium bowl, mix together the melted dairy-free butter, brown sugar, applesauce, and vanilla extract. In a small bowl, whisk together the gluten-free flour, baking soda and salt. Add the dry ingredient mixture to the wet ingredient mixture and stir just until combined.

    Fold in the diced apple. Pour 3/4's of the batter into the prepared baking dish. Using a spoon, drop dollops of cooled caramel sauce over the top of the batter, leaving space between each scoop. Scoop the remaining blondie batter over the top. Using a knife, swirl the batter and caramel together just enough to spread the caramel throughout.

    Bake at 350 degrees for 45 minutes or until a toothpick inserted in the center comes out clean. Allow blondies to cool before cutting. Serve blondies alone or topped with So Delicious Dairy Free Cashew Milk frozen dessert in Snickerdoodle. Drizzle additional caramel sauce over the top before serving.
