Baked Pumpkin Spice French Toast {gluten + dairy free}

French toast is one of our breakfast favorites around here. Usually just made by dipping slices of bread into a mixture of egg, almond milk, and cinnamon, and frying it up, then served with a drizzle of maple syrup. I love the idea of baked french toast, which typically is put together the night before and refrigerated overnight, saving you time in the morning. While it sounds nice, putting the whole thing together really only takes a couple of minutes. The main reason to make it ahead is to allow the bread more time to soak up the liquid for a more custard-like texture.

After many trials and even a family favorite for Christmas morning, I have determined that I don't notice enough of a textural difference to really have a preference. For this particular recipe, I make it all at once rather than letting it sit overnight. If you want to save a bit of time in the morning, you could prepare your bread cubes, liquid mixture, and topping mixture separately, then toss them together when you are ready to bake it. If you try the overnight method with this recipe, I would love to know how it turns out!

Baked Pumpkin Spice French Toast {gluten + dairy free} 

1 loaf gluten free french bread (I used Schar brand)
3 eggs, beaten
1/4 cup pumpkin puree (You can also use pumpkin butter, apple butter, or pumpkin-apple butter)
1/2 tsp pumpkin pie spice

1/4 cup brown sugar
2 Tbsp dairy free butter substitute
1/4 cup chopped pecans

Preheat oven to 400 degrees. Spray a 9" round or 8x8" baking dish with cooking spray. Cut bread loaf into 1-inch cubes and place in baking dish.

In a medium bowl, whisk the beaten eggs, pumpkin spice coconut milk, pumpkin puree, and pie spice together until well blended. Pour over the bread cubes.

In a small dish, use a fork to mix together the brown sugar, dairy free butter, and pecan pieces to form a crumble. Distribute the crumble evenly over the top of the bread cubes. Cover dish tightly with foil. 

Bake at 400 degrees with the foil covering it for 30 minutes. Remove foil and continue baking 15 minutes or until set in the center. Remove from oven and allow to cool slightly before slicing and serving.
