Apple Pie Pizza {gluten-free + vegan}

When faced with a boxed pizza crust mix, the logical thing to do would be to make a savory pizza recipe with it. I plan to, but first I knew I wanted to recreate a dessert pizza that I remember from my childhood. Enjoy Life Foods Pizza Crust Mix has enough of a neutral flavor that it works well with both savory and sweet toppings. Because I added so much in the way of sweet toppings, it actually helped to not have a sweet crust underneath.

Apple Pie Pizza {gluten-free + vegan}

This recipe makes 3 pizzas using half of the pizza crust mix. Double the remaining ingredients if you wish to use the entire pizza crust mix, which will make 6 pizzas. 

1 box Enjoy Life Foods Pizza Crust Mix
1 medium apple, peeled, cored & finely diced

Streusel Topping
1/3 cup certified gluten-free oats
2 Tbsp brown sugar
1 Tbsp gluten-free all purpose flour
1 Tbsp cold dairy-free butter
1 tsp cinnamon
pinch of salt

1/2 cup powdered sugar
2-4 tsp dairy-free milk of choice

Caramel Sauce
1/4 cup brown sugar
2 Tbsp dairy-free butter
2 Tbsp dairy-free milk of choice
1/8 tsp vanilla extract

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or spray lightly with non-stick spray.

Prepare the Enjoy Life Pizza Crust according to package instructions. After kneading the dough, divide it into six equal pieces. Roll each piece out into a circle on a lightly floured surface. Place three of the dough circles on the baking sheet and bake for 8 minutes or until they begin to brown lightly. Remove from oven and set aside to cool.

In a small bowl, combine the Streusel Topping ingredients and cut them together with a fork; set aside. In another small bowl, combine the Glaze ingredients; set aside.

In a pan over medium heat, melt down the brown sugar and butter for the Caramel Sauce, stirring constantly so the sugar does not burn. Add the dairy-free milk and continue stirring. Turn heat to low and allow the mixture to simmer until it begins to thicken slightly. (It will thicken more as it cools also.) Add the apples and continue to simmer for about 5 minutes until the apples just start to soften. Set aside to cool

Turn oven temperature to a low broil setting.

To assemble: spoon 1/3 of the caramel sauce and apple mixture evenly over the top of each pizza crust. Sprinkle 1/3 of the streusel topping mixture over the apple mixture on each pizza crust. Return the pizzas to the oven on a low broil for 3-5 minutes, watching VERY closely so they do not burn. (You just want the streusel topping to begin to brown and the caramel mixture will start to bubble.)

Once the pizzas have lightly browned, remove them from the oven and allow them to cool slightly. Just before serving, drizzle the glaze over the top of each pizza and cut into triangles. Serve warm.
