Chocolate Chip Cookie Ice Cream Sandwiches {gluten free + vegan}

Ice cream sandwiches are a classic summer treat. I used to enjoy them as a child and I would love nothing more than for my little one to enjoy them too. Unfortunately, your typical ice cream sandwiches are made with real vanilla ice cream, ruling them out for us. I have found a few dairy-free options at the grocery store, usually made with coconut milk ice cream. This is fine, but sometimes you just crave that "real" vanilla ice cream flavor. The other issue for us is that most of those also contain gluten. Not that I have to be able to enjoy them with the kids necessarily, but I don't mind the occasional treat as well! 

We recently had the opportunity to try the new Cashew Milk Frozen Desserts from our wonderful friends at So Delicious Dairy Free. The Creamy Cashew flavor is SO close to that of a homemade vanilla ice cream and super scrumptious. I just knew I wanted to make our own ice cream sandwiches from the moment I first tasted it.

This recipe really couldn't be simpler. All it takes is a container of So Delicious Dairy Free Cashew Milk Frozen Dessert (in any flavor) and your favorite chocolate chip cookie recipe. You can use our recipe which is free of gluten and the top 8 most common allergens too!

Chocolate Chip Cookie Ice Cream Sandwiches {gluten free + vegan}

1 container So Delicious Dairy Free Creamy Cashew (or any flavor) cashew milk frozen dessert
1 recipe gluten-free, allergy-friendly chocolate chip cookies

Preheat oven to 350 degrees. Line two 8x8 baking dishes with parchment paper, leaving enough paper on each edge to use as a handle after baking.

Prepare cookie dough recipe and divide batter in half. Spread half of the cookie dough into each prepared baking dish evenly and make sure the top is flat to create an even surface. Bake according to cookie recipe directions until cookies are lightly browned. Allow to cool completely. 

While the cookies are baking and cooling, allow the cashew milk frozen dessert to soften in the refrigerator until it is a spreadable consistency. Once the cookies are completely cooled, spread the container of cashew milk frozen dessert over the top of one of the pans. Using a knife or offset spatula, smooth out the top surface. Place the dish in the freezer for 5-10 minutes, so it can begin to set but not freeze yet. 

Remove the first baking dish from the freezer. Taking the second baking dish, carefully use the parchment paper handles to remove the entire cookie bar from the dish. Peel the paper from the cookies, removing it completely. Place the second cookie bar on top of the cashew milk dessert, pressing gently to adhere it to the top. 

Using a sharp knife, very carefully cut the dessert into bars of whatever size you desire (this is much easier to do while the cashew milk frozen dessert is still soft). After cutting, cover the baking dish with plastic wrap and return to the freezer. Allow to set for at least 1 hour before serving.

When ready to serve, allow the baking dish to sit at room temperature for a few minutes, until the bars can easily be removed from the dish using the bottom layer of parchment paper to lift it out. Once removed, the sandwiches should break apart where they were cut before freezing (you may have to use a knife to pry them apart if they froze back together). 

To store leftovers, wrap each sandwich individually in plastic wrap and store in a freezer safe bag or container. If you were at our house, there would be no leftovers...these children ate ALL of them before I could even blink!
