Spinach Artichoke Dip {gluten free + vegan}

I have always been a fan of spinach artichoke dip. Warm, gooey and cheesy, it is a delicious appetizer or perfect compliment to grilled or baked chicken. I have enjoyed the traditional version since my son's milk allergy diagnosis, but have anxiety any time I eat something that contains his allergen. Plus, I recently decided to cut dairy out of my diet again, so this dairy-free version is a fantastic substitute.

Some of my favorite, go-to brands make an appearance in the recipe too: So Delicious Dairy Free (culinary coconut milk), Go Veggie Foods (vegan Parmesan style topping), and Just Mayo (egg-free mayonnaise). If you have a favorite dairy-free cheese alternative that does not contain soy, feel free to replace the Parmesan with what works for you.

Spinach Artichoke Dip {gluten free + vegan}

2 Tbsp olive oil
1/2 small onion, diced
2 cloves garlic, minced
1 bag baby spinach, washed and chopped finely
1 6-ounce jar or can artichoke hearts, chopped
1 cup Just Mayo egg-free mayonnaise 
1/3 cup + 2 Tbsp Go Veggie Foods dairy-free Parmesan style topping, divided
1 11-ounce container So Delicious Dairy Free Culinary Coconut Milk (original)
1 Tbsp cornstarch
1/2 tsp salt
1/4 tsp black pepper

Serve with:
Gluten-free crackers, or
Corn tortilla chips, or
1 loaf gluten-free french bread (I like Schar brand, which is dairy- and egg-free too), thinly sliced and toasted (see below for toasting instructions)

Preheat oven to 350 degrees. Spray an 8-inch oven-safe baking dish with non-stick cooking spray; set aside.

In a saute pan over medium-high, heat the olive oil. Add the onion and sweat until it becomes translucent. Add garlic and cook for about 30 seconds. Turn heat down to medium. Add spinach and cover the pan with a lid in order to allow it to wilt.

Add the artichoke hearts, mayonnaise, and 1/3 cup dairy-free Parmesan topping. Stir until well combined.

Pour the culinary coconut milk into a measuring cup. Add the cornstarch and whisk until combined. Add to the pan and stir until the mixture begins to thicken. Once thickened, pour mixture into the prepared baking dish. Top with remaining 2 Tbsp dairy-free Parmesan topping. 

Place baking dish in the oven and bake for 15-20 minutes or until it gets bubbly and begins to brown on top. Allow to cool slightly before serving.  

If serving with gluten-free toast: While the dip is cooling, place thinly sliced bread on a baking sheet in an even layer. Brush each slice lightly with olive oil or melted butter. Turn on broiler to lowest setting and place bread in oven. Allow the bread to broil for 2-3 minutes or until it begins to lightly brown on top. (Watch closely so it does not burn!) Remove bread from oven and serve alongside warm dip.
