Evaporated Milk {dairy free}

Combine 1 1/2 cups water and soy milk powder in a slow cooker. Turn heat to high and leave uncovered to reduce for about 1 hour. The mixture will become very thick. Allow to cool to room temperature. 

Once cooled, add the mixture to a blender or food processor with 1 Tbsp water. Blend until smooth. Store in an airtight container in the refrigerator until ready to use. Allow to come to room temperature before using in recipes.
