Cream of Celery Soup {gluten free + vegan}

So many recipes call for Cream of [insert food item here] Soup, it seems almost impossible to make them dairy- and gluten-free and still keep the integrity of the recipe. Since the canned version is out of the question for us, I am always looking for a healthy, safe recipe to replace this item.

Powdered versions work fine, but they can still feel a little bit generic. My recipe calls for fresh, wholesome ingredients that I have on hand all of the time. It only takes a few minutes to prepare and has incredible flavor. Thanks to So Delicious Dairy Free Culinary Coconut Milk, it also has such a creamy and rich flavor.

Cream of Celery Soup {gluten free + vegan}

Makes approximately 2 pints of soup                  

  • 2 Tbsp gluten-free all purpose flour
  • 1 Tbsp Earth Balance Soy Free (or other dairy-free butter)
  • 2 celery stalks, sliced lengthwise and diced
  • 2 cloves garlic, minced
  • 1 Tbsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups vegetable stock
  • 1 11-ounce container So Delicious Dairy Free Culinary Coconut Milk (original)
  • 1 Tbsp cornstarch

In a saucepan over medium heat, melt the butter. Once melted, add the gluten-free flour and stir until it begins to cook. Add celery and allow it to sweat until it begins to soften. Add the garlic, parsley, salt, and pepper.

Pour in stock and increase heat to medium-high. Allow the mixture to come to a low boil. 

Meanwhile, pour the coconut milk into a measuring cup. Add the cornstarch and whisk together.

Once the stock is boiling, add the coconut milk mixture and stir until combined. The mixture will begin to thicken. Once thickened, remove mixture from heat. Use immediately or pour into pint-size jars and store in the refrigerator for later use.

This is the perfect soup mix to add to other recipes like my Pizza Casserole or Green Bean Casserole for a delicious, fresh, allergy-friendly addition to recipes that call for canned Cream of (whatever) Soup! You could even replace the celery with fresh sliced mushrooms if you prefer. My husband doesn't like mushrooms (which I happen to LOVE), but this is a delicious compromise. :)
