Maple Bacon Donuts {dairy, egg + gluten free}

Our kids love it when I make Mini Pancake Muffins for breakfast. They're delicious and fun. Since it is such a simple and versatile recipe, I decided to try something a little different using the same ingredients. With the slight hint of maple flavor and the soft, not-too-sweet pancake texture, I decided they needed a little addition of coffee and bacon. These are fun and sophisticated at the same time. What could be better?!

Maple Bacon Donuts {dairy, egg + gluten free}

Makes 10-12 donuts                                                   

  • 2 cups gluten free all purpose flour (I like Namaste Perfect Flour Blend)
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cup almond milk (or other dairy-free milk), at room temperature
  • 3 Tbsp coconut oil, melted
  • 1 Tbsp vinegar
  • 1/4 tsp maple extract

Glaze & Topping:

  • 1 1/2 cups powdered sugar
  • 2-3 Tbsp brewed coffee
  • 1/4 tsp maple extract
  • pinch of salt
  • Bacon, cooked and crumbled

Preheat oven to 350 degrees. Spray a donut pan with non-stick cooking spray; set aside. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In a large mixing bowl, combine the almond milk, coconut oil, vinegar and maple extract. Gradually add the dry ingredients and mix just until combined. Spoon the batter into a piping bag and pipe evenly into each well of the donut pan.

Bake for 10-12 minutes or until tops are set and beginning to lightly brown. Remove from oven and allow to cool approximately 5 minutes. Carefully remove donuts and allow them to cool on a cooling rack.

For the glaze, in a small bowl, whisk together the powdered sugar, coffee, maple extract, and salt. Carefully dip the top of each donut into the glaze to coat. Place back on the rack and allow any excess icing to drip off. Top with crumbled bacon.
