Vanilla Pudding Pops {vegan + gluten free}

I usually make pops of some sort every summer. This year we have been trying out some new store-bought versions (see: Dreyer's Outshine Fruit Bars - yum!) and haven't made any from scratch yet. Instead of going with my usual recipes, like my Cookie Dough Popsicles, Fudgesicles or Strawberry Banana Ice Pops, I decided to transform my Chocolate Pudding recipe to a vanilla version, then turn it into pops. Delicious as they are plain, they're even better with a drizzle of chocolate that mimics Magic Shell. These Vanilla Pudding Pops are a perfect summer treat!

Vanilla Pudding Pops {vegan + gluten free}

Makes about 4 servings                                      

  • 1/3 cup sugar
  • 3 Tbsp cornstarch
  • 1/4 tsp salt
  • 2 cups almond milk
  • 1 Tbsp vanilla extract

In a saucepan over medium heat, whisk together the sugar, cornstarch and salt. Gradually pour milk in while whisking until any lumps have dissolved. 

Stir frequently until the mixture begins to thicken, keeping the temperature at medium. You don't want it to boil or it could scorch. Remove from heat and whisk in the vanilla. Pour mixture into a molds and freeze for 6-8 hours or until set.

Optional: Prior to serving, remove pops from mold and lay them flat on a plate or baking sheet lined with a piece of wax paper. Melt 1/2 cup Enjoy Life chocolate chips with a dollop of coconut oil and stir together. Drizzle the chocolate mixture over the pops.  The coconut oil will cause the chocolate to set up as it sits on the cold pops.

Enjoy outside because it will probably get messy!
