Blueberry Oat Bars {gluten free + vegan}

Do you ever wonder if recipes that claim to be "exactly like" the original version of something you would enjoy at a restaurant are too good to be true? I do. Which is one reason I LOVE to try those recipes to find out for myself.

If you are gluten-free and are not following Gluten-Free on a Shoestring, you are missing out. I began following them on Facebook and loved seeing their drool-worthy photos of gluten-free baked goods. I haven't purchased the cookbook, Gluten-Free on a Shoestring Bakes Bread YET, but it is absolutely on my list to purchase in the near future. 

One evening this week, I had the urge to bake something. But...it was my grocery shopping week and the pantry and fridge become nearly barren at that point. I had been planning to make GFOAS' Starbucks-Style Gluten Free Blueberry Oat Bars for some time. It turned out that I already had all of the ingredients to try them out!

Now, I haven't tried the original bars from Starbucks in order to give you a comparison, but that doesn't matter. These bars definitely live up to the hype! I adapted the ingredients slightly in order to keep them completely dairy-free and also make them egg-free. They could be soy-free and nut-free as well, but I use Bob's Red Mill gluten-free rolled oats, which are made in a facility with soy and tree nuts. If you have allergies or intolerances to either of those, just substitute your own safe brand of oats.

Blueberry Oat Bars {gluten free + vegan} 

(as adapted from Gluten-Free on a Shoestring)                                

Crumble Topping:

  • 8 Tbsp dairy-free butter, melted and cooled (I used Earth Balance Soy Free)
  • 1 cup gluten-free all purpose flour (I used Namaste Perfect Flour Blend)
  • 2 cups blueberries, rinsed and patted dry (I used frozen organic blueberries...fresh will work also)
  • 1/2 cup gluten-free all purpose flour
  • 1/4 tsp xanthan gum
  • 1 cup certified gluten-free rolled oats
  • 1/4 cup sugar
  • 1/3 cup packed brown sugar
  • 1/8 tsp salt

  • 1/2 tsp xanthan gum
  • 3/4 cup certified gluten free oat flour
  • 1/8 tsp kosher salt
  • 1/4 tsp baking powder
  • 1/2 cup sugar
  • 1/4 cup certified gluten free rolled oats
  • 6 Tbsp dairy-free butter, melted and cooled
  • 1/3 cup dairy-free yogurt (I used vanilla So Delicious Dairy Free Cultured Coconut Milk yogurt)
  • 1 to 2 Tbsp lukewarm water

Fruit Layers
  • 1 Tbsp sugar
  • 2 Tbsp certified gluten free oat flour
  • 1/8 tsp salt
