Chocolate-Covered Cherry Granola {dairy + gluten free}

  • 2 cups certified gluten free oats
  • 2/3 cup sliced almonds
  • 1/2 cup pecan pieces
  • 1 Tbsp ground chia or flaxseed
  • 1/2 tsp salt
  • 2/3 cup honey
  • 1/4 cup unsweetened cocoa powder
  • 2 Tbsp coconut oil
  • 1 Tbsp vanilla extract
  • 2/3 cup dried tart cherries
  • 1/2 cup Enjoy Life Foods dark chocolate chunks

Preheat oven to 170 degrees. Line a baking sheet with parchment paper.

In a large bowl, combine the oats, almonds, pecans, ground chia seeds and salt.

In a saucepan over medium heat, whisk together the honey, cocoa powder, coconut oil and vanilla. Once combined, remove from heat and pour over the oat mixture.

Using a rubber scraper, fold the mixture together until well coated and combined. Spread the mixture evenly on the parchment-lined baking sheet.

Bake at 170 degrees for two hours. Stir the mixture and allow it to bake for one hour longer. Remove from oven and allow to cool completely.

Once cooled, toss together with the dried cherries and chocolate chunks.
