Steak + Pepper Stir-fry {dairy + gluten free}

This is a quick and flavorful stir-fry that works perfectly using my Grilled Balsamic Steak recipe. Throw the marinade together in the morning and when you get home from work, cook the vegetables quickly while the meat is grilling. You'll have a delicious, easy weeknight dinner in less than 20 minutes! My kids and husband like to wrap the meat and veggies up in tortillas like fajitas.

Steak + Pepper Stir-fry {dairy + gluten free}

1 Tbsp olive oil
2 bell peppers, sliced
1/4 white onion, thinly sliced
1 can water chestnuts, drained
1 Tbsp rice wine vinegar
2 tsp Tamari gluten-free soy sauce
1 tsp honey
1 clove garlic, minced
salt & pepper, to taste
Grilled Balsamic Steak recipe

Prepare steak marinade ahead of time and grill according to recipe instructions. While the steak is grilling, proceed with cooking the peppers.

Place a skillet over medium high heat. When hot, add oil and allow it to heat up (but not burn). Add peppers and onions and saute for 3-5 minutes or until they begin to soften. Turn heat down to low.

Add vinegar, Tamari, honey, and garlic and stir until sauce forms. Add water chestnuts, salt, and pepper. Continue to cook on low for 3-5 more minutes.

Serve sliced steak and cooked vegetables with white rice, or wrapped in tortillas for fajitas.
