When my little guy was diagnosed with his milk allergy at 7 months old, I was at a bit of a loss. I learned how to read ingredient labels and be diligent about the food I bought to feed him. Besides a few easy recipes, I didn't really know how to replace milk and other milk-containing ingredients in the majority of recipes I liked to use. I always loved to cook and bake so there was a definite learning curve I knew I had to conquer.

Mint Chocolate Chip Cupcakes (dairy + gluten free)

It's birthday week! Or.... really just an excuse to make cupcakes. ;)

I always try and create a new cake/dessert recipe for my birthday, because no one else in this house is making me a cake, and buying one really isn't much of an option. Last year it was these amazing strawberry cupcakes, that are probably my favorite ever. I posted the question on my Facebook page about what flavor I should try this year, and as soon as I read "Mint Chocolate Chip" I knew that was it!

Champagne Cupcakes {dairy + gluten free}

Happy New Year's Eve! If I'd planned better this week, I would've had this recipe up with a few extra days to spare, but time got away from me! The good news is, this recipe calls for ingredients that most of us probably already have on hand! If you're a fan of my Strawberry Cupcakes, this is a very similar recipe, except the liquid is replaced with champagne - perfect for today!

Mini Cranberry Orange Spice Cakes {dairy + gluten free}

Salted Caramel Devil's Food Cake Cookies {dairy free}

We had a Christmas Treat Contest at work this past week and I had been thinking of making this recipe for awhile. It was the perfect reason to make them, although now I need to make another batch for us to enjoy here at home too! For the treat contest, I did not make these gluten free, however they were dairy free. Making a gluten free version is next up on my list. I'll let you know if they turn out as well as the original.

Banana Cream Pie Cake {dairy + gluten free}

While banana cream pie might not be what comes to mind when you think of holiday recipes, but around Thanksgiving, we were looking for a yummy dessert idea that was different than your usual pumpkin and pecan pies. I decided to mix it up a bit with this banana cream pie cake, and I was not disappointed. Soft, fluffy cake, vanilla pudding, sweet bananas, and cool creamy whipped topping was a perfect detour from the usual fall desserts. I am definitely going to be making this recipe during the spring and summer too!

It seems like we are always having to prepare a safe dessert or treat for impromptu parties. While I love trying to come up with new ideas, sometimes I don't have the time to plan ahead and am scrambling to come up with something in a pinch.

Still on my lemon and pie kick from the last post...I've always been intrigued by lemon curd. While I've used the store-bought stuff plenty of times, I really wanted to try making my own. Boy was that a fantastic idea. Have you ever tried homemade lemon curd? It's AH-MAZ-ING. So delicious and much better than the kind you can buy in a can or jar. Like, eat it with a spoon good.

Strawberry Cupcakes {dairy + gluten free}

As a little girl with a birthday less than a week before Valentine's Day, I recall always wanting a strawberry birthday cake. I loved the pink Funfetti frosting that came with coordinating sprinkles and my mom even had the heart-shaped pan to make it super festive.

Although my tastes have changed some over the years, strawberry is still in my top five. I almost always end up making a cake or dessert of some sort for my own birthday (a blessing and a curse when you love to bake and a have restricte diets). Previous front-runners have included Strawberry Lemonade and Orange Creamsicle cupcakes. This year instead of trying something new, I decided to go back to basics and make one of my all-time favorites.

Double Chocolate Cookie Cups {dairy + gluten free}

What is it about the month of February and Valentine's Day that always seems to sneak up on me? Maybe it's the too short break after all of the holidays before that gives me just enough time to pause and take a breath, then suddenly Valentine's Day is here. We don't make a very big deal about V-day around here. I always pick up a stuffed animal and maybe some (safe) chocolate for the boys, but besides the celebrating at school it flies by fairly quickly. 

Because of the chaos that is our life in February, I always like to come up with creative treat ideas. Due to our food restrictions, we cannot just head to the store and pick out festive sugar cookies or other fun, pre-made treats. Coming up with something I can easily throw together is part of the fun! That is where these Double Chocolate Cookie Cups came from.

Caramel Apple Blondies with Caramel Sauce {gluten free + vegan}

It's no secret that apples are one of my favorite ingredients to use in recipes during the fall. Just type in "apple" in the search box over there ---> and you will see!

I have tried on a couple of occasions to make a dairy-free caramel sauce that would work for dipping apple slices in, drizzling over ice cream, or adding to baked desserts for a gooey addition. I finally had the time and patience to develop the perfect sauce and I was super excited to find a use for it. I decided the first recipe I would use it for would incorporate all three.

Mocha Mississippi Mud Crunch Bars {dairy + gluten free}

Do you ever randomly think about foods from your childhood that you didn't really think you liked, but suddenly you have to try them again? I hadn't had that experience until about the last trimester of my pregnancy. For some reason, out of the blue, I would have a memory of a particular recipe that my mom would make and decided I had to make it.

One such food item was brownies. I remember my brother being a fan of brownies, but I didn't care for them as much. I do remember a specific recipe for caramel brownies that Mom made using a German chocolate cake mix and individual caramels. That was probably the one I actually enjoyed the most. Because I haven't come up with a way to remake those gooey caramel squares sans dairy, I didn't make the effort to try them.

Apple Pie Pizza {gluten-free + vegan}

When faced with a boxed pizza crust mix, the logical thing to do would be to make a savory pizza recipe with it. I plan to, but first I knew I wanted to recreate a dessert pizza that I remember from my childhood. Enjoy Life Foods Pizza Crust Mix has enough of a neutral flavor that it works well with both savory and sweet toppings. Because I added so much in the way of sweet toppings, it actually helped to not have a sweet crust underneath.

Cornbread Muffins {gluten free + vegan}

During the cooler months, one of our favorite meals is chili. I make a huge batch and cook it all day in the slow cooker. These Cornbread Muffins are the perfect side dish. Actually, they are perfect for a side with just about anything! I also happen to love them for breakfast, drizzled with a bit of maple syrup. Just thinking about it now...I'm going to have to make another batch!

Blueberry Cornbread Donuts {gluten free + vegan}

Well, I finally got bored with sitting around watching TV and decided to get to work on some long overdue recipe posts. Lately, as soon as I feel a little bit of baking/cooking motivation coming on, I take advantage, create a new recipe, and shoot photos. It's the actual posting of those recipes that's been neglected after that. But...I'm going to do my best to get caught up on a few of our favorites so that I can share them with you!

Blueberry Cornbread Donuts by Making it Milk-free

These Blueberry Cornbread Donuts were a fun experiment that turned out really unique and delicious. They can definitely be made in the more traditional muffin shape, but I thought the donuts were a fun and interesting change. Plus, my boys seem to eat things better when they're shaped like junk food rather than their healthier counterparts.

Chocolate Crinkle Cookies {dairy, egg, soy + gluten free}

I have seen photos of Chocolate Crinkle Cookies floating around the internet the past few weeks and I love how beautiful they look. I assumed there had to be some elaborate trick to making them look so pretty, but once I began reading about them, they are actually super simple! The powdered sugar coating adds a hint of sweetness which transforms the flavor of your ordinary chocolate cookies.

You can really use just about any chocolate cookie recipe. I love making my Chocolate Brownie Cookies. In a pinch, I have also used Immaculate Baking Company's Gluten Free Fudge Brownie Cookie Dough, which I typically keep in my freezer for last minute cookie cravings (mostly for safe school treats quickly, actually). This dough contains eggs and soy. They have a warning on the label regarding the company's manufacturing processes due to being made in a facility that processes other allergens as well. We typically avoid foods/products made in a facility where milk is used, but there are a few companies who label well and are forthcoming with their processes that I do feel comfortable with them.
