Double Chocolate Scones with Vanilla Glaze (vegan + gluten free) + Book Review: Go Dairy Free, 2nd Edition

The links in this post contain affiliate links and I will receive a small commission if you make a purchase after clicking on my link.

When my little guy was diagnosed with his milk allergy at 7 months old, I was at a bit of a loss. I learned how to read ingredient labels and be diligent about the food I bought to feed him. Besides a few easy recipes, I didn't really know how to replace milk and other milk-containing ingredients in the majority of recipes I liked to use. I always loved to cook and bake so there was a definite learning curve I knew I had to conquer.

Chocolate Dipped Cones (dairy-free)

This past summer and early fall, we got really bored with sitting around the house and, though the weather was hot, we found some really fun ways to keep busy and spend time together as a family.

Our boys enjoyed throwing rocks in the river. Dawson especially loved watching the trains go by. We played at parks, visited the zoo, fed the ducks at a nearby pond, and went hiking. On occasion, we topped off all of our outdoor fun with a cold, ice cream treat. When you have a child with a severe milk allergy, going out and enjoying ice cream together as a family can prove to be very difficult. We don't have any dairy-free ice cream options so we usually have to first stop at the store and pick up safe ice cream before hitting the ice cream shop for everyone else.

Healthy Meals for Busy Moms: Sun Basket Meal Kits

I received product for free from Moms Meet to use and post my honest opinions. I was compensated for this post and this page may contain affiliate links.

I love to cook. And bake. And grocery shop. I know that might make me a little strange, but between being a foodie and a food-allergy mom, I spend so much time planning meals around our dietary needs that are also unique and delicious, that I've grown to love every step. Yes, I am also that mom who does a little happy dance in the aisles when I find new-to-us, safe products.

Mini Cranberry Orange Spice Cakes {dairy + gluten free}

It's no secret that one of my favorite flour blends to bake with is Namaste Foods Perfect Flour Blend. When I was asked by Namaste Foods to review some additional products, I couldn't pass up the opportunity. I always have fantastic results with the flour blend, and I've tried a few of their products in the past, but I really wanted to try the Spice Cake Mix

Banana Cream Pie Cake {dairy + gluten free}

While banana cream pie might not be what comes to mind when you think of holiday recipes, but around Thanksgiving, we were looking for a yummy dessert idea that was different than your usual pumpkin and pecan pies. I decided to mix it up a bit with this banana cream pie cake, and I was not disappointed. Soft, fluffy cake, vanilla pudding, sweet bananas, and cool creamy whipped topping was a perfect detour from the usual fall desserts. I am definitely going to be making this recipe during the spring and summer too!

Cranberry Orange Biscuits {gluten free + vegan}

I have a memory from my childhood of these delicious cinnamon raisin biscuits that my mom would take me to get from a fast food restaurant. They were soft, flaky, slightly salty with pops of sweet raisins, and topped with a sweet, creamy glaze.

I have always wanted to recreate those glorious biscuits but dairy- and gluten-free, of course. But I decided I would mix things up a bit and use tart, fresh cranberries instead of raisins, and add in bright orange zest for a pop. I didn't make a glaze for these, but they would be amazing with a simple powdered sugar/dairy free milk icing drizzled over the top.

Chocolate Cupcakes with Vanilla Almond Buttercream (gluten free + vegan)

When you have food allergies or intolerances, it's imperative that you have a good, go-to cake recipe that it easily thrown together. It seems like we are always having to prepare a safe dessert or treat for impromptu parties. While I love trying to come up with new ideas, sometimes I don't have the time to plan ahead and am scrambling to come up with something in a pinch.

HBD to Us! Caramel Apple Crisp {gluten free + vegan}

Guess what today is!? It's the 4th Anniversary of Making it Milk-free! I cannot believe I've been blogging here for this long. When I think back to when I started and all that I have learned these years, it is so amazing! It truly is a labor of love here, and while we have moments of struggle (like the nine months I simultaneously was pregnant and had writers block), the exciting moments are just that much more rewarding and fun. This little love of cooking-food allergy advocacy-turned hobby of mine has been such an adventure. If you have been following along this whole time or if you found us just recently, THANK YOU for your support and for checking out our recipes!

In honor of this special day, I'm sharing one of my favorite (new) fall dessert recipes. This is the time of year I start to plan for upcoming holiday treats, desserts, meals, etc. While pumpkin-everything seems to steal the show more often than not, apple flavors are everywhere as well. I always have grand plans to make a caramel apples or other apple-flavored treats this time of year, and this was no exception.

Hazelnut Cookie Bars with Chocolate Peanut Butter Ganache {dairy +gluten free}

I'm taking a break from all things pumpkin for the time being. The time to prepare for Thanksgiving meals is quickly approaching, but I was in the mood for something different. This recipe is exactly that!

Scarecrow Crunch Trail Mix {dairy + gluten free}

It may not quite be fall here yet, but I'm in the mood for fall flavors, colors, and some much cooler weather. Our Dollar Tree store stocked our favorite allergy-friendly candy corn and mellow-creme pumpkins (unless you have egg and soy allergies...sorry!), so I stocked up on several bags. This snack mix is one of the easiest to throw together and satisfies that sweet + salty craving.

Pistachio Lime Zucchini Donuts {dairy + gluten free}

We are back to school and our old daily routines are going in full force! It's been a crazy few weeks around here getting back into the swing of things. Hopefully we'll find our way here soon and I'll stop feeling like I'm forgetting everything every single day. Gah! I'm ready for a relaxing vacation any time now.

S'mores Icebox Cake (vegan with a gluten-free option)

I love to bake and cook. But during the hot summer months, it can be nice to switch it up a bit with some no-bake recipes or grilling recipes so I can keep my kitchen (and the rest of the house) nice and cool while still enjoying some delicious food.

S'mores are a quintessential summer treat. I love to incorporate the flavors of some classic favorites in fun new ways, and this S'mores Icebox Cake does that perfectly! By making it a day in advance and letting it set up in the refrigerator, the cookie/graham cracker layers get nice and soft to create a cake-like texture.

Lemon Blueberry Oat Bars {gluten free + vegan}

You may have noticed my obsession with all things lemon these days (or always). Interestingly enough, I never knew the difference between a "regular" lemon and Meyer lemons. I've heard of Meyer lemons and that they are delicious, but I never knew why. I found that my local grocery store had bags of Meyer lemons on sale last week and I was intrigued to taste the difference for myself.

From what I have read, Meyer's are kind of a cross between a lemon and a mandarin orange. Personally I noticed they are slightly less tart than a regular lemon but still with a bright, fresh flavor. I decided they would be perfect for my Lemon Blueberry Oat Bars and boy, was I right. (I am positive these bars would be just as delicious with regular lemons if you cannot find Meyers.)

Pasta with Savory Lemon Cream Sauce {gluten free + vegan}

Every year when school is almost out for summer and baseball is in full swing (pun intended), we always seem to be rushing so much in the evenings that dinner is usually corn dogs or something that can be thrown on the grill in a hurry. It never fails that I also start to miss cooking during this time. While it can be a chore when I'm trying to come up with a plan for every night of the week, cooking is kind of therapeutic for me. I can zone out over the stove and love coming up with new meals.

Berry Bubbly Gelatin Bites

I really enjoy finding fun treats for the kids to enjoy that I feel better about during these candy-filled holidays. When I know they can have something healthy that is delicious and an out of the ordinary treat, it is a win-win for all of us! I created my Berry Fizz Mocktail recipe and then decided to make these gelatin treats to go along with our Valentine's brunch.

Not only were they amazingly simple to make ahead of time, they're also super easy to modify for any holiday and flavor you want. You can also make them a grown-up treat by replacing the sparkling grape juice with champagne! :)

Creamy "Ranch" Pasta Salad {vegan + gluten free} and 21 Days Dairy Free!

After the holidays have passed, I always have great plans to eat healthier, quit all of the bad eating habits I developed from Halloween through New Year's, and maybe even lose some weight. While I've cut dairy from my diet on multiple occasions and felt immensely better than before, it always seems to be the hardest diet change for me to stick with unless it's out of necessity (like when I was nursing my firstborn and because of his milk allergy). I have had no problem cutting gluten for over three years, avoiding any fast food for a long time, and not drinking soda for almost three years.

While I've fallen off the no-soda-drinking wagon, the others are still no problem for me. But if I'm being honest with you (and with myself), I don't feel my best when I'm not keeping a handle on my eating habits. I can think of all of the excuses in the world ("I'm nursing so I need the extra calories," is my favorite one currently...) but I know that if I just commit to the change and focus on making a healthy diet a priority, I won't regret it.

What is one of the key pieces to making a change and sticking with it? Having someone to hold you accountable, of course! My friends at So Delicious Dairy Free have created the So Delicious Dairy Free 21 Day Dairy-Free Challenge Group on Facebook to help those of us who need it find support and recipes on our quest to maintain a dairy-free diet. They are even giving away prizes such as gift cards, food kits, and a trip for 2 to Boulder, Colorado to meet with health and fitness expert John Pierre - who wouldn't love to win that?!

The 21-Day Dairy-Free Challenge with So Delicious begins January 21 and goes through February 10, 2016, but you can go ahead and join the Facebook group and get started now. What is so beneficial about going dairy-free? Here are the Top Reasons People Go Dairy Free. Also, over on Instagram, for every photo of a dairy-free meal or snack uploaded with #DairyFree4Good during the official challenge dates, So Delicious Dairy Free will donate $1 to the Farm Sanctuary (up to $10,000; limit 3 entries per person per day).

Cornbread Muffins {gluten free + vegan}

During the cooler months, one of our favorite meals is chili. I make a huge batch and cook it all day in the slow cooker. These Cornbread Muffins are the perfect side dish. Actually, they are perfect for a side with just about anything! I also happen to love them for breakfast, drizzled with a bit of maple syrup. Just thinking about it now...I'm going to have to make another batch!

Blueberry Cornbread Donuts {gluten free + vegan}

Well, I finally got bored with sitting around watching TV and decided to get to work on some long overdue recipe posts. Lately, as soon as I feel a little bit of baking/cooking motivation coming on, I take advantage, create a new recipe, and shoot photos. It's the actual posting of those recipes that's been neglected after that. But...I'm going to do my best to get caught up on a few of our favorites so that I can share them with you!

Blueberry Cornbread Donuts by Making it Milk-free

These Blueberry Cornbread Donuts were a fun experiment that turned out really unique and delicious. They can definitely be made in the more traditional muffin shape, but I thought the donuts were a fun and interesting change. Plus, my boys seem to eat things better when they're shaped like junk food rather than their healthier counterparts.
