Enchilada Stuffed Peppers (dairy-free, gluten-free, Whole30, Paleo-friendly)

Trying to find a happy medium between healthy, Whole30 friendly meals and things my children will eat without complaining seems a bit like a full-time job lately. I feel like I've gotten back into a really good routine with meal planning and prepping, and for the most part, meals have been well-received by the Hubs and these boys of ours. Although, our littlest is in this "I won't eat anything unless it comes on a wooden stick or in plastic packaging" phase right now. (I'm telling myself we'll make it through this stage soon without wishing away any of his cute little two-year old quirks.)

Oatmeal Peanut Butter Cookies (dairy + gluten free)

I've always been a fan of peanut butter cookies and oatmeal cookies. These Oatmeal Peanut Butter Cookies are the best of both worlds combined! I started making this recipe for my kids over five years ago. Though it has always been a recipe of very few ingredients, I've adapted it over the years to use certified gluten-free oats and coconut sugar so they still enjoy the cookies and I feel a bit better about what I'm feeding them.

Hearty Chili (dairy + gluten free)

Years ago, my husband and I watched cooking shows on TV almost religiously. When we still had cable, it was on Food Network just about constantly. One night we happened to be watching a chili cookoff and started talking about how we'd make the "perfect" chili recipe. This recipe was born almost immediately afterward and has been made more times than we can count.

Almond Crusted Chicken (dairy-free, gluten-free, Whole30, paleo-friendly)

This recipe is one that I first began making for my family nearly five years ago. Each and every time it's been a hit. It also happens to fit into our meal plan perfectly this month. I'm doing a Whole30 and, by default since I'm the cook, the rest of the family is to some extent as well. This recipe is easy to make, healthy, real ingredients and so versatile you can serve it with any sides.

Guacamole (gluten-free, vegan, Whole30, Paleo)

My favorite dip/appetizer/topping for just about anything is, hands-down, guacamole. Any time we have food days at work or I need to bring a side dish to an event, I will always go for a big batch of guac with some chips alongside. It's kinda my thing.
