German Chocolate Brownies (dairy + gluten free)

Growing up, I remember my mom making German chocolate cake and I was not a fan. I think it was because of the coconut and pecans mixed into the icing and I didn't really care for either of those ingredients. Now, I'm a HUGE fan of both coconut and pecans, so I'm all for some good German chocolate!  

I made this German Chocolate Brownie recipe to share with my co-workers. We have so many food days, it's a bit ridiculous - but fun and always delicious! This recipe is certainly and keeper and one I'll be making for pot-lucks and get togethers often.

German Chocolate Brownies

  • 1 box gluten-free chocolate cake mix
  • 2 eggs
  • 1/3 cup oil
  • 1 can sweetened condensed coconut milk
  • 1 cup shredded coconut flakes
  • 1 cup chopped pecans
  • 1/2 cup Enjoy Life Foods mini chocolate chips 
Preheat the oven to 350 degrees. Spray an 8x8 glass baking dish with non-stick spray.
In a medium bowl, combine the cake mix, eggs and oil. Mix until fully combined but do not over-mix. Spread the mixture into the baking dish, pressing it all the way into the corners.

Bake for 10 minutes. While it is baking, prepare the topping. 

In a small bowl, combine the sweetened condensed coconut milk, coconut flakes and pecans. The mixture should be thick. Remove the brownies from the oven and evenly spread the topping over the brownies. Sprinkle the mini chocolate chips on top and return to the oven.

Continue baking for 20-25 minutes. Do not overbake. Remove from the oven and allow to cool for 15-20 minutes before slicing. Slice into squares and serve. They're delicious warm!
