Fish Tacos with Roasted Red Pepper Aioli {dairy, gluten + egg free}

The best fish tacos I've ever had were in Florida, made with fresh fish straight from the Gulf. Living in the midwest, it can be hard to find really fresh, delicious fish without paying a pretty penny for it. I have been able to find some really decent, wild caught fish at our local grocery store and it is perfect for these amazing fish tacos!

Baked Turkey Quinoa Meatballs {dairy + gluten free}

I started making these meatballs over three years ago when I ended up cooking entirely too much quinoa and needed to find a use for it all. What I love most about these is how easy they are to make ahead and freeze. You can either freeze them before baking and then just take out what you need and let it thaw, or you can bake them all up, freeze them, and remove them to reheat a few whenever you need a quick and healthy meal.

Peaches + Cream Protein Ice Cream {gluten free + vegan}

I remember August always being the hottest month of the summer throughout my childhood. While our August started off hot, hot, HOT, the evenings have felt almost unseasonably cool. It is definitely getting me in the mood for fall, and we only have one week left before the kiddos go back to school! I know I say it every year, but I cannot believe how quickly time is flying by.

While I'm looking forward to fall and cooler weather, I want to enjoy these last few weeks of summer as much as possible. The fresh peaches in this ice cream really pack a summertime flavor punch. I've been slightly obsessed with peaches this summer already as evidenced by my Peach Bourbon BBQ Ribs, Grilled Peaches with dairy-free vanilla ice cream and caramel sauce, Peach Berry Frozen Yogurt Pops, and Peach Bourbon Cocktail recipes.

And because I always like to try and fit a healthy aspect into my recipes whenever possible, this ice cream is special because it's chock full of protein and fiber, and while being deliciously flavorful, it is also secretly healthy!

I'm giving away a $25 Amazon gift card, and thanks to my friends at So Delicious Dairy Free, I'm throwing in some VIP Free Product Coupons as well! Be sure to enter below. Good luck!

In addition to all this excitement, I'm teaming up with some of my favorite blogger friends for a Virtual Ice Cream Social. There are so many amazing recipes (all gluten free and a lot that are dairy-free) PLUS each blogger is also hosting a giveaway. After you've checked out my recipe below, scroll on down for a link to their delicious recipes, and click on over to enter their giveaways too!

Peaches + Cream Protein Ice Cream {gluten free + vegan}

Ice Cream Base:
  • 3 cups coconut milk
  • 1-2 fresh peaches, pitted, diced and frozen
  • 1/2 cup vegan protein powder, vanilla flavor (such as Bob's Red Mill or Vega)
  • 1 Tbsp vodka (to keep it from hard-freezing; can be omitted but you'll have to thaw the ice cream longer without it for it to be scoopable)
  • 1 Tbsp psyllium fiber powder (optional)
  • 1 tsp vanilla extract
  • Peach Simple Syrup recipe
Peach Simple Syrup
  • 1 fresh peach, pitted and diced
  • 1/2 cup sugar
  • 1/2 cup water
Make simple syrup:
Combine diced peach, sugar and water in a small saucepan over medium heat. Bring to a boil, muddle the peaches slightly, leaving some in chunks. Stir until the sugar is dissolved. Remove from heat and allow to cool completely.

In a blender, combine the coconut milk, frozen peaches, protein powder, vodka, psyllium powder, and vanilla extract. Pulse until smooth. Pour the mixture into a freezer-safe container. Stir in the cooled Peach Simple Syrup until combined and cover.

Place the covered container in the freezer for two hours. Remove from freezer and stir, then return to freezer for an additional two hours. Scoop into bowls or cones to serve. Top with crushed snickerdoodle cookies for an extra little crunch!

Here is a fantastic round-up of cool treats to enjoy on these hot summer nights! Check out the links below the photo for each one!

Grilled Chicken Fajita Kabobs {dairy + gluten free}

I really find that when we're in the throes of summer and heading toward the start of the new school year, I start to slack off a little on meal planning. We have gotten into a bad habit of going out to eat frequently which throws off our whole weeknight routine.  I have a list of typical meals that I can throw together the night before so we can have a quick dinner the next evening, but sometimes even those recipes get a little old.

Combine that with my desire to stretch grilling season out as long as possible so as not to heat up my kitchen, and these quick, grilled, kabob meals are my new go-to. Just like our Hawaiian Pork Kabobs or our Shrimp Boil Kabobs, these have quickly become a new favorite around here!

Road Trippin' with WaterWipes

This post was sponsored by WaterWipes as part of an Influencer Activation for Influence Central. I received complimentary products to facilitate my review.

This past week, we went on our first family vacation since long before our littlest was born. I was super anxious about the trip, knowing that traveling with a 10-month old was going to be a challenge. Not only were we going to be completely out of our normal routine for 10 days, we were going to try and manage a four hour road trip, ideally with only one stop along the way. For a child who hates going in his car seat with a passion, it was going to be a miracle if we pulled it off.
