Breakfast options that are easy to take on the go are must-haves around here. It always seems like we are scrambling to get out the door each morning. If I can just grab something on the way out the door, it helps to make the entire morning easier on us all.

With three boys in three completely different stages, our life is basically made up of running from one place to the next. Chauffeuring children back and forth across the county to school, practices and games, summer camp, friends houses, the pool...the list goes on and on. For our older boys, who are 13 and 7 now, we are able to get by with the bare minimum. The only necessities consist of two epinephrine auto-injectors, asthma inhalers, and some allergy-friendly snacks.

Pre-Easter Outtakes

We had a family Easter get-together yesterday on Palm Sunday with my extended family and the boys had a ball. The sun was bright but there was a chilly wind blowing so Dawson was a little bit flustered and refused to look at me no matter what I did. While I will definitely try again on Easter to see if I can get some print-worthy photos of these silly boys, I am loving these outtakes. Sometimes real life is the exact opposite of what I envision...thank goodness for a sense of humor!

Lucky Leprechaun Snack Mix

St. Patrick's Day is one of those holidays that tends to sneak up on me every year. Once we make it through Valentine's Day, I always have Easter on my mind. Luckily I am usually able to come up with something sweet and simple for this somewhat overlooked holiday.

Mini Lemon Tarts {dairy + gluten free} with optional egg free version

Still on my lemon and pie kick from the last post...I've always been intrigued by lemon curd. While I've used the store-bought stuff plenty of times, I really wanted to try making my own. Boy was that a fantastic idea. Have you ever tried homemade lemon curd? It's AH-MAZ-ING. So delicious and much better than the kind you can buy in a can or jar. Like, eat it with a spoon good.

Lemon Cream Pie {top 8 + gluten free}

It is beginning to feel like spring around here, though I can't complain too much as our winter has been very mild compared to typical Midwestern winters. I have all things spring on the brain too, so it has arrived at the perfect time! I don't often go all out with decorating around the house for specific holidays, but more for the season. Although I've picked up quite a few cute items from Target so there are a few bunnies around for the time being!
