Pineapple Coconut Dessert Cups (gluten free + vegan)

We've had 100 degree temps around here lately (as I'm sure is the case about everywhere) and everything on our menu is getting lightened up a bit. While we love our desserts, this heat calls for light and refreshing choices.

This dessert is so simple, doesn't require any cooking, and is made with a few easy ingredients. Perfect for satisfying a summertime sweet tooth without an overload of sugar or calories!






Pineapple Coconut Dessert Cups {vegan + gluten free}


  • 1 1/2 cups crushed pineapple
  • 1 tub So Delicious Dairy Free CocoWhip, thawed
  • 1 cup gluten free graham crackers or cookies
  • 1 1/2 Tbsp coconut oil
  • Fresh pineapple chunks for garnish
  • Optional: toasted coconut 

Drain the juice from the crushed pineapple and place the pineapple in a medium bowl. Gently fold in 3/4 of the tub of CocoWhip.

Finely crush the graham crackers or cookies. Combine the crumbs and the coconut oil in a small bowl.

To assemble: 

Place about 1/4 cup of the graham mixture in the bottom of four dessert cups or bowls. Press down to compact them together.

Spoon the CocoWhip and pineapple mixture on top. Top each with a dollop of the remaining CocoWhip and garnish with a chunk of fresh pineapple and a sprinkle of toasted coconut flakes.
