Peanut Butter Filled Brownies {dairy + gluten free}

Sometimes you just need a quick and easy dessert that can be thrown together in just a few steps. I always try to keep some of our favorite boxed cake, cookie and brownie mixes on hand for a gluten- and dairy-free dessert in a hurry. We always seem to need things at the last minute (ah, the life of a food allergy family).




I recently tried a gluten-free and allergy-friendly brownie mix from Jewel's Gluten Free Bakery. I have followed Jewel's Bakery and Cafe's social media channels for awhile now, and if I ever make it to Phoenix, it is one of the first stops on my list! Jewel's delicious goodies and mixes are available for purchase online to be shipped.

I was having a rare chocolate craving and decided my Jewel's gluten free brownie mix would be the perfect fix. Instead of your usual brownie shape, I decided it'd be fun to mix it up a bit with this Peanut Butter Filled Brownie creation. If you have a peanut allergy, you can replace the PB with any other safe nut or seed butter, or even use jam instead. A fruity, blackberry or strawberry filling would be delicious here!


Peanut Butter Filled Brownies

  • 1 gluten-free, dairy-free brownie mix 
  • 1 cup chocolate flavored or plain peanut butter, other nut or seed butter, or jam (I used Peanut Butter & Co,'s Dark Chocolate Dream)
  • powdered sugar for topping (optional)
Prepare your brownie mix as instructed on the package. Place your peanut butter in a small bowl and warm in the microwave for 30 seconds to help it spread easier. 

Spray a bundt pan (or you can use an 8x8 glass baking dish) with non-stick spray. Spread two-thirds of the prepared brownie mix evenly in the bottom of your pan. Pour warmed peanut butter over the top of the brownie mix. (If using a ring-shaped pan, be sure to keep the filling about an inch in from the edge of the pan. You're going to basically create a tunnel in the center of your brownie mix.)

Spread remaining brownie mix over the filling. Bake for 30-40 minutes (or as directed on the package). Remove from oven and allow to cool for about 20 minutes. Dust with powdered sugar, slice and serve warm. You could even add a scoop of your favorite dairy-free ice cream dessert.
