Lucky Leprechaun Snack Mix

St. Patrick's Day is one of those holidays that tends to sneak up on me every year. Once we make it through Valentine's Day, I always have Easter on my mind. Luckily I am usually able to come up with something sweet and simple for this somewhat overlooked holiday.



Having boys, dressing them in green is never an issue. Mason is currently obsessed with anything neon green so it is an every day occurrence. I picked up Dawson's St. Patty's Day outfit what seems like months ago now. Isn't he sweet?!



At the last minute last night, I decided to throw together this festive popcorn snack mix. I had picked up chocolate Lucky Charms a few weeks ago when I ran across them at Walmart. They were a perfect addition to the mix along with a few other dairy free staples I always have stocked. As for the Lucky Charms, they do not say that they're gluten free on the box I purchased. I've heard rumors that they'll be gluten free at some point, but I haven't really kept up on that. While I think Lucky Charms are fun, I really don't care for them all that much myself. Of course, the kids feel differently so I was happy to pick them up on their behalf. 

Now, I did partake in the snack mix and did not personally have any issues. I did not see wheat, barley, rye or oats on the label. They are made with corn and are touted as whole grain. All I would say is proceed with caution and do your research before you consume them if you have a severe allergy or Celiac disease.

Lucky Leprechaun Snack Mix

  • 2 - 100 calorie bags Skinny Pop lightly salted popcorn
  • 1 cup Lucky Charms chocolate cereal with green marshmallows
  • 1/2 cup gluten free pretzel sticks, broken in half
  • 1 bar Milkless Polar Dream white chocolate or other dairy free white chocolate, melted
  • 1/4 cup dairy free mini chocolate chips, melted
  • 1 Tbsp dairy free mini chocolate chips (for topping)

Line a baking sheet with parchment. Spread popcorn in an even layer on the parchment. Scatter Lucky Charms cereal with marshmallows and broken pretzel pieces on top of the popcorn.

Using a small spoon, drizzle the melted white chocolate and chocolate chips in a back-and-forth motion over the top of the mixture. Sprinkle extra 1 Tbsp of mini chocolate chips over the melted chocolate.

Place pan in refrigerator for at least 10 minutes or until melted chocolate has set up before serving. When ready to serve, break into pieces. Cover leftovers with plastic wrap or store in an airtight container or zip-top bag.
