Berry Bubbly Gelatin Bites

I really enjoy finding fun treats for the kids to enjoy that I feel better about during these candy-filled holidays. When I know they can have something healthy that is delicious and an out of the ordinary treat, it is a win-win for all of us! I created my Berry Fizz Mocktail recipe and then decided to make these gelatin treats to go along with our Valentine's brunch. 

Not only were they amazingly simple to make ahead of time, they're also super easy to modify for any holiday and flavor you want. You can also make them a grown-up treat by replacing the sparkling grape juice with champagne! :)

Berry Bubbly Gelatin Bites by Making it Milk-free

Berry Bubbly Gelatin Bites

  • 2 cups fruit juice of your choice
  • 2 cups sparkling grape juice (I used white grape so they'd turn out pink)
  • 1-ounce package unflavored gelatin powder (use agar-agar for a vegan version)
In a saucepan over medium heat, whisk the gelatin powder into the fruit juice of your choice. Do not boil. Once liquid is hot and powder has completely dissolved, remove from heat. Carefully pour in the sparkling grape juice (or champagne for an adult version) and stir to combine. 

Allow the liquid to cool slightly. Place an 8x8 glass baking dish on a sheet pan or other flat, transportable surface. Carefully pour the liquid into the glass baking dish. Place dish in refrigerator for 4 hours or overnight. 

Using cookie cutters, cut desired shapes. Use a small metal spatula to remove the shapes and place on a serving platter. Keep chilled until ready to serve.
