Christmas Popcorn Snack Mix {gluten free + vegan}

One of our family favorite snacks has got to be our popcorn snack mixes. We love to create fun, festive mixes with treats we love. Our S'mores Popcorn Snack Mix and our Lucky Leprechaun Snack Mix are just two examples of some of the mixes we make. We always start with popcorn (either fresh popped and lightly salted, or Skinny Pop brand to save some time), then we add in sweet and salty treats from pretzels, to marshmallows, cereal, candy...whatever our hearts desire.

Soft Caramel Candy {gluten free + vegan}

I've been loving homemade caramel lately. Being able to make a delicious, dairy-free version to add to recipes like my caramel apple crisp or my caramel apple blondies, plus a couple of new recipes coming very soon, has been fun and exciting. I know, I'm kind of a nerd for thinking food is exciting, but as a food allergy parent, sometimes that is a part of this life. Do you ever get excited and do a happy dance in the grocery store when you discover a new, safe product to feed your child? I certainly do. Sparkling Pear Sangria

Banana Cream Pie Cake {dairy + gluten free}

While banana cream pie might not be what comes to mind when you think of holiday recipes, but around Thanksgiving, we were looking for a yummy dessert idea that was different than your usual pumpkin and pecan pies. I decided to mix it up a bit with this banana cream pie cake, and I was not disappointed. Soft, fluffy cake, vanilla pudding, sweet bananas, and cool creamy whipped topping was a perfect detour from the usual fall desserts. I am definitely going to be making this recipe during the spring and summer too!

Cranberry Orange Biscuits {gluten free + vegan}

I have a memory from my childhood of these delicious cinnamon raisin biscuits that my mom would take me to get from a fast food restaurant. They were soft, flaky, slightly salty with pops of sweet raisins, and topped with a sweet, creamy glaze.

I have always wanted to recreate those glorious biscuits but dairy- and gluten-free, of course. But I decided I would mix things up a bit and use tart, fresh cranberries instead of raisins, and add in bright orange zest for a pop. I didn't make a glaze for these, but they would be amazing with a simple powdered sugar/dairy free milk icing drizzled over the top.

This recipe solves both of those issues for me.

Sweet Stir-fry Chicken + Veggies {dairy + gluten free}

Do you ever feel like you make the same three meals on repeat and need a menu revamp? I feel that way frequently and find myself trying to come up with loads of new meal ideas and then blow my budget on all of the ingredients to put just a few of them together. 

When I can sit down and make a meal plan, then make my grocery list from that, I feel like my life is so much more organized. But I have learned through the years that I really need to pick one new meal idea each week or even every other week, then stick to tried and true, easy to throw together, family favorites the rest of the time. This revelation has truly changed the way I grocery shop, and even the way I cook. I can easily swap certain ingredients for others which mixes it up just enough to feel different and not blow my budget. 

Some of our usuals that are easily interchangeable:
  • Mexican (soft or crunchy tacos; fish tacosshredded pork quesadillas, nachos or taco salads)
  • Italian (spaghetti, lasagna, goulash, chicken alfredo, pizza casserole, pizza bites)
  • Meat/Veggie/Starch (all roasted on a pan in the oven, or slow cooker meals are my fave!)
    • chicken/brussel sprouts/sweet potatoes
    • chicken/broccoli and cauliflower/rice
    • smoked sausage/peppers and onions/roasted potato wedges
    • pork loin/green beans or asparagus/mashed potatoes
  • Sandwiches (pulled pork, shredded chicken, sloppy joes, or burgers)
  • Grilled kebabs/kabobs in warmer weather (Hawaiian pork, shrimp boil, chicken fajitas, steak)
The best part about any of these meal ideas is that you can really just pick up whatever protein, vegetable, and starch or sauce you feel like having, and make any one of these meals on a whim. I like to stock up on marinara sauce, gluten free noodles, rice, tortilla chips, and any other ingredients that I use for sauces to just have on hand at any moment. Then I pick up meat when it is on sale and throw it in the freezer. Then I really just have to make sure I have fresh produce to go with everything else. 

Having this plan in place has really helped to cut back on the amount of money I spend at the grocery store, as well as the number of trips I have to make. I usually make one monthly trip to specialty stores to pick up all of our dairy free cheeses, butter, and specialty gluten free products that aren't sold at every store. I make one trip to Aldi or shop the sales at my regular store for pantry items and meat. 

Then I just have to make a run for produce and anything that I feel like grabbing on my weekly/bi-weekly shopping trip. I also build days into our menu to go out for dinner, or when we're just sticking with leftovers or doing a "fend for yourself" night to give myself an occasional break from cooking. 

One of the other easy ways to switch up flavors is to add a sweet and savory sauce to your meat and veggies. This Sweet Stir-fry Chicken and Veggies recipe has been a family favorite for many years. It's fast and delicious, and the kids just love it. Most of the ingredients are things I always have around and can just throw together quickly on a weeknight.

HBD to Us! Caramel Apple Crisp {gluten free + vegan}

Guess what today is!? It's the 4th Anniversary of Making it Milk-free! I cannot believe I've been blogging here for this long. When I think back to when I started and all that I have learned these years, it is so amazing! I love that so many companies are making it easier for families to participate in the Teal Pumpkin Project this year. I was so excited about the movement the first year it began, and my love for this effort has just continued to grow. There are so many reasons to swap out the usual candy treats for some fun, non-food items instead. I know my kids love getting little prizes and appreciate them much more than a few pieces of candy, which we inevitably end up getting rid of not too long after collecting it.

Wild One! First Birthday Party

I'm only about ten days or so late posting this, but our sweet little Dawson turned one! He has such an awesome personality and fills every day with so much joy. He is absolutely the piece that completed our little family. I like to call him the caboose on our crazy train...because that's how I feel most days!

We celebrated his birthday a few days early since most of our family members had some free time over Labor Day weekend and it worked out perfectly! I'm pretty excited to have a kid with a warm weather birthday, since our other two have birthdays in December and January, and it's hard to do much outdoors with them. We still have really fun indoor parties but I have always wanted to plan a party with a camping theme.

Our Dollar Tree store stocked our favorite allergy-friendly candy corn and mellow-creme pumpkins (unless you have egg and soy allergies...sorry!), so I stocked up on several bags. I started making these meatballs over three years ago when I ended up cooking entirely too much quinoa and needed to find a use for it all. What I love most about these is how easy they are to make ahead and freeze. You can either freeze them before baking and then just take out what you need and let it thaw, or you can bake them all up, freeze them, and remove them to reheat a few whenever you need a quick and healthy meal.

Grilled Chicken Fajita Kabobs {dairy + gluten free}

I really find that when we're in the throes of summer and heading toward the start of the new school year, I start to slack off a little on meal planning. We have gotten into a bad habit of going out to eat frequently which throws off our whole weeknight routine.  I have a list of typical meals that I can throw together the night before so we can have a quick dinner the next evening, but sometimes even those recipes get a little old. 

Combine that with my desire to stretch grilling season out as long as possible so as not to heat up my kitchen, and these quick, grilled, kabob meals are my new go-to. Just like our Hawaiian Pork Kabobs or our Shrimp Boil Kabobs, these have quickly become a new favorite around here!

S'mores Icebox Cake (vegan with a gluten-free option)

Grilled Shrimp Boil Kabobs (dairy + gluten free)

Our summer meals primarily consist of either tossing something on the grill, or throwing something together quickly before heading off to games, practices, the pool, etc. When we can find a few free evenings to enjoy a slower paced meal, I try to mix it up a bit and try new things, but still try to do our cooking outdoors as much as possible. I can't stand heating up the house by using the oven or stove when it's already a scorcher!

One of our family favorites is a good, old fashioned seafood boil. We've gone all out with crab legs before, which can get a little pricey, especially if you're trying to feed a crowd. Every now and then though, we like to enjoy the food without all the fuss. I've done shrimp boil packets many times as well, but this kabob version is super simple and easy to prep ahead. While a full blown seafood boil is great, this shrimp only version cuts the cost a bit and there's no need to stand over a huge pot of boiling water to enjoy the same flavors.

Banana Bread {gluten free + vegan}

In the past I was never really a big fan of banana bread, probably because it traditionally contains walnuts (which I strongly dislike). My boys used to eat bananas like they were going out of style. However, they usually decide at some point that they're banana'd out and just stop eating them. Annnd, it's almost always just after I've bought a bunch for the week. I typically try and wait them out for a few days to see if they'll change their minds, but when they start to get over-ripe, I just toss them in the freezer to use later on. 

I've used our frozen, ripe banana stash for all kinds of recipes from cinnamon rolls to no-churn ice cream ("nice" cream, I suppose). I am not sure exactly at what point I realized that banana bread doesn't have to contain walnuts. But praise the Lord I did because now I love banana bread! If you are like me and just want to savor the warm, cinnamon-y, enveloping aroma and flavor of banana bread, this recipe is for you!  

(Note: I've edited this recipe from its original version to remove the eggs and added peanut butter. You could totally omit the PB if you prefer. Both ways are equally delicious.)

Grilled Marinated Salmon {dairy + gluten free}

I love quick and easy grilling recipes that taste so good it's hard to believe they are healthy too. We have been super busy lately and our evenings are hectic. I've been missing sitting down to dinner together as a family and enjoying good food and each other's company. We're nearing the end of baseball season so hopefully we'll have a bit of a break in the activities for a few weeks or so.

Our boys have started to become a bit pickier lately, but thankfully they still enjoyed this salmon, as it used to be a favorite. Buying salmon, especially wild-caught instead of farmed salmon can get really costly here in the midwest so I don't tend to make this recipe too often. But every time I do, it never fails that someone in the family wishes we'd have it more often!

Chocolate Chip Cookies (top 8 + gluten free)

These chocolate chip cookies are ones that I've been making for a few years now. I took a favorites recipe of my mom has had since I was a child and modified it slightly to be gluten-free, dairy-free and egg-free. As an added bonus, they're free of the top 8 allergens (they do have coconut). They are a definite family favorite! 

They're slightly crunchy on the edges and soft in the middle. I like to make a double batch and freeze half so I can bake up a few whenever we want a sweet treat. Bonus, if you have this dough in your freezer, you can bake up just enough to use the cookies in my Chocolate Chip Cookie Mousse Cups, or even some awesome Chocolate Chip Cookie Ice Cream Sandwiches

Summer BBQ Dinner Party

One of our favorite things to do when the weather warms up is having our friends and family over, grilling out, and enjoying good food and each other’s company. It has been a usual occurrence since my husband and I began dating, with me making a last minute plan to have everyone over and him putting up with agreeing with me. I always seem to have a theme in mind also. We've done many a seafood boil and we host a pumpkin carving party every fall.

No matter the theme or my vision, we're usually firing up the grill for some delicious dishes. One bonus about grilling out is not heating up the entire house with a hot and overworked oven! One of our recent favorites is ribs. It all started last Labor Day weekend when my husband wanted to try and cook some ribs the day before our little man was due to arrive. Not only were the ribs delicious, but little baby Dawson must've thought so too because I went into labor just a few hours later! :)

Since then, my husband purchased a smoker and we have enjoyed delicious ribs and other meats many times since then. One perk of living as near as we do to Kansas City is all of the delicious food options nearby. Kansas City is famous for its BBQ and we sure do love it! Even so, it is nice to be able to easily recreate that delicious BBQ in the comfort of our backyard at times.

Easy Homemade Waffles {gluten free + vegan}

Have you heard of the phenomenon that is aquafaba? I suppose it isn't really a phenomenon, but it's a pretty sweet discovery, that I'm sure has probably been around a lot longer than I personally realize. Aquafaba is basically the starchy liquid left from a can of chickpeas or other beans, and it can be used as a replacer for egg whites. It whips up into this light and airy fluff that seems to be a perfect meringue-like texture. 

I'm in awe every time I see a new recipe created using it and have been intrigued for awhile now. I finally tried it and it is everything it's cracked up to be! All I did was pour the liquid into the bowl of my stand mixer, add a pinch of cream of tartar (not sure if this is even necessary), and turned the speed up. A few quick minutes later and I had a giant bowl of this amazing stuff! 

I wasn't sure exactly what my plans were at that point, but it was early morning so I decided to fold it into waffle batter to make the texture like it would be if you were to fold in whipped egg whites. My waffles were light and airy with a slightly crispy edge, just the way I like them. I also used Namaste Foods Raw Goods Quinoa Flour for an added protein punch. I've also used their gluten-free all purpose flour blend with spectacular results.

No-bake "Cheesecakes" {gluten free + vegan}

One of my favorite dessert before going gluten-free was cheesecake. I used to love creating different flavors of cheesecakes for special occasions. Of course, they weren't dairy-free either so once we started managing Mason's milk allergy, cheesecakes have been a thing of the past.

While we have since found a scrumptious dairy- and gluten-free cheesecake made by Daiya Foods, it is still not the healthiest thing to eat on a regular basis. In order to have a healthier, guilt-free option to enjoy anytime I had a cheesecake craving, I created this no-bake, individual serving version. This recipe makes four individual servings.

Lemon Layer Cake {gluten free + vegan}

Last month we had a little guy baptized at the church where I grew up. It was a nice, intimate family gathering and we had everyone who was able to make it join us at my parents' house for lunch afterward. My dad grilled burgers and my mom had prepared the side dishes. I brought an allergy-friendly pasta salad and dessert.

Peanut Butter Filled Brownies {dairy + gluten free}

Sometimes you just need a quick and easy dessert that can be thrown together in just a few steps. I always try to keep some of our favorite boxed cake, cookie and brownie mixes on hand for a gluten- and dairy-free dessert in a hurry. We always seem to need things at the last minute (ah, the life of a food allergy family).

Hawaiian Pork Kabobs {dairy + gluten free}

With all of the craziness that early summer brings, with school out and baseball nearly every night of the week, I'm loving quick and easy meals that I can prep in advance and then grill in a few minutes when I get home from work.
