Nog French Toast Bake {dairy + gluten free}

I love making Christmas a special time for my boys. We do lots of activities on Christmas Eve, including sprinkling reindeer food outside, leaving our magic key for Santa to get into the house, and our Elf on the Shelf, Teddy always leaves them a special gift. Teddy didn't show up this year though. Apparently he knew that his shenanigans would be too stressful for us with a new baby in the house or something. ;) 

In the past I've always made pancakes or coffee cake for breakfast on Christmas morning, and felt rushed to prepare and bake that early while the gift-unwrapping is occurring. A couple of years ago, I decided to make something for breakfast in advance so that I could just pop it in the oven first thing and enjoy the rest of the morning with the boys rather than standing over the stove the whole time.

This Nog French Toast Bake has been my go-to recipe ever since. There are so many overnight breakfast casseroles around now and so much delicious inspiration on Pinterest. I also love to pick up So Delicious Dairy Free Nog Coconut Milk as soon as I can find it and it is perfect for this recipe.

Nog French Toast Bake {dairy + gluten free} from Making it Milk-free

Nog French Toast Bake {dairy + gluten free}          

  • 1 loaf gluten-free cinnamon raisin bread or 2 loaves gluten-free french bread, cut into 1" cubes 
  • 3/4 cup brown sugar, packed
  • 1/2 cup dairy-free butter substitute
  • 2 Tbsp real maple syrup
  • 2 cups So Delicious Dairy Free Nog
  • 6 eggs
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
Spray a 9x13 baking dish with cooking spray.

In a saucepan over medium heat, combine the butter, brown sugar and maple syrup. Whisk to combine and bring the mixture just to a boil. Pour the mixture into the bottom of the baking dish. Place bread cubes on top of the syrup.

In a medium bowl, whisk together the Nog, eggs, vanilla, cinnamon, nutmeg, and ginger. Pour the mixture evenly over the bread. Spray a piece of foil with cooking spray and place the foil spray side down over the dish. Refrigerate overnight.

When ready to bake, preheat the oven to 375 degrees. Place the baking dish (still covered with foil) in the oven and bake for 30 minutes. Remove the foil and bake uncovered for an additional 10-15 minutes. 

Remove from the oven and allow to cool for about five minutes. Cut squares to serve and top with maple syrup or sprinkle with powdered sugar.
