I am a creature of habit in many areas of my life. Grocery shopping is one of these areas. This stems from buying foods for specific restricted diets and the many years I have spent looking for certain products and trying to find the best deals. When I do venture out to a new or different store than usual, if I find a familiar product, I often do a happy dance in the aisle. Yes, I get many strange looks but it is just so exciting! If you or a loved one has food allergies, I am sure you can relate!




The other day while I was shopping at Walmart, the baby was sleeping in his carrier and I had some time to kill. I wandered the aisles for a bit just to see what I could find. I was excited to find Silk Dairy-Free Yogurt

Silk Yogurt has been a staple in our refrigerator since my *almost* seven year old was first diagnosed with a milk allergy at six months old. I remember learning to read ingredient labels and Silk being one of the very first brands I purchased.

Nearly every morning, my little guy had Silk Dairy-Free Yogurt mixed with his baby oatmeal or baby rice cereal for breakfast. He LOVED it right from the start. Fast forward over six years later and you will always see a few containers in our fridge. Silk Yogurt is the perfect everyday yogurt for your life!

Enjoy one of the six delicious flavors all on their own or in a variety of ways. We like the strawberry, black cherry, and blueberry flavors topped with gluten-free granola and fresh berries. The pineapple and peach-mango flavors are fantastic blended up with some frozen bananas and spinach for a quick breakfast smoothie on the go. With 6 grams of soy protein per serving, no cholesterol, and no artificial colors or flavors, plant-powered nutrition never tasted so good!

I frequently add the vanilla flavor to baked goods like donuts, muffins, or quick breads, and it is Mason's favorite flavor to eat plain. It is so smooth and creamy, made from the goodness of plants instead of dairy. I always get asked how I make sure Mason is getting enough calcium since he cannot have dairy products. Silk Yogurt is also an excellent source of calcium and vitamin D!

In baked goods that I've made using Silk Yogurt, the yogurt is typically blended into a batter, contributing to taste and texture but not really standing on its own. I decided I wanted to create a delicious dairy-free Holiday recipe with Silk Dairy-Free Yogurt, and this time allow the yogurt to shine. 

My Black Forest Trifle has a creamy vanilla filling sandwiched between layers  of soft, rich chocolate cake and decadent cherries. Top it with your favorite dairy-free whipped topping and this trifle makes a dessert so beautiful, it can even serve as the centerpiece at your holiday party.

Black Forest Trifle {gluten free + vegan}


Chocolate Cake:
•3 cups gluten free all purpose flour
•2 cup sugar
•1/2 cup unsweetened cocoa powder
•2 tsp baking soda
•1 tsp salt
•2 cup cold water
•1 cup canola oil
•2 tsp vanilla extract

Vanilla Cream Filling:
•3 containers Silk Dairy Free Yogurt, vanilla flavor
•2 cans full fat coconut cream or coconut milk, refrigerated overnight (do not shake)
•1 cup powdered sugar

•3 cups cherry pie filling (homemade or 2 cans)
•Dairy-free whipped topping (optional)
•Chocolate for garnish (shaved chocolate, mini chocolate chips, or a dusting of cocoa powder)

Chocolate Cake:
Preheat oven to 350 degrees. Spray an 8x8 glass baking dish with cooking spray.

In a medium bowl, whisk together the flour, sugar, cocoa, baking soda, and salt. In a small bowl, mix together the water, oil, and vanilla. Whisk the wet ingredients into the dry ingredients and stir until combined. 

Pour cake batter into the baking dish and bake for 45-50 minutes or until a toothpick comes out clean. Allow cake to cool completely. Once cooled, cut the cake into 1-inch cubes. 

Vanilla Cream Filling:
Transfer the Silk Dairy Free Yogurt into a small bowl. Add the powdered sugar and stir to combine. 

Remove the cans of coconut cream or coconut milk from the refrigerator. The cream should have separated from the water in the can. Open the top of the cans and carefully scoop out the cream layer into the bowl. (Save the liquid to add to your morning smoothie!)

Gently fold the coconut cream into the yogurt mixture. Cover with plastic wrap and place in the refrigerator until you are ready to assemble the trifle.

Assembly:
Begin layering your ingredients in the trifle bowl, starting and ending with the chocolate cake. The number of layers you will have depends on the size of your bowl. I like to do 2 layers of the filling and 3 layers of cake.

Step 1. Evenly distribute one-third of your chocolate cake cubes in the bottom of your trifle bowl. 

Step 2. Pour half of the vanilla cream filling over the cake. Be sure to get some of the filling around the bowl where it can be seen through the sides. 

Step 3. Scoop half of the cherry pie filling next, again ensuring it can be seen from the outside of the bowl.

Repeat steps 1-3 with the remaining ingredients, ending with the last layer of chocolate cake cubes on top. Cover the trifle with plastic wrap and place in the refrigerator to chill until just before you are ready to display and serve it. Before serving, top with dairy-free whipped topping, garnish with a few extra cherries, and dust lightly with cocoa powder, or top with chocolate shavings or mini chocolate chips for garnish.
