Just because I try to snack healthier the majority of the time, doesn't mean I won't splurge once in awhile though. Especially when it's Halloween week! My plan originally was to make something fun to snack on while watching Halloween movies with the kiddos. Some of my favorites are on this week: Hocus Pocus, The Addams Family and The Addams Family Values, and Casper. (This is bringing me back to my middle school days...)
Fortunately my original plans were derailed when the Kansas City Royals made it to World Series! So now our plan is to watch baseball all week...hopefully with a happy outcome and win for our team!
I made a batch of S'mores Popcorn for the occasion and am trying my hardest to keep little hands out of it until after dinner has been eaten and the game is on. Wish me luck!
S'mores Popcorn Snack Mix
6 cups lightly salted popcorn (save a few minutes by using already popped corn like Skinny Pop, or make your own)
1/2 cup gluten-free pretzel sticks, broken in half
1/2 cup gluten-free cookies (I like Annie's Cocoa & Vanilla Bunny Cookies because they taste like graham crackers and are the perfect size)
1/2 cup mini marshmallows
1/4 cup prepared marshmallow fluff (optional)
1/4 cup Enjoy Life Foods semi-sweet mini chocolate chips
1 tsp coconut oil
Line a baking sheet with parchment or waxed paper. Spread popcorn in an even layer on the pan. Break the gluten-free pretzels in half so they are bite-sized and spread them over the popcorn. Spread the gluten-free cookies evenly next. Sprinkle the mini marshmallows on top.
Optional: If you choose to add the marshmallow fluff, scoop from the container into a bowl. Allow extra room in the bowl as the marshmallow fluff will puff up quite a bit. Heat in the microwave for 20-30 seconds to soften. Using a teaspoon, dollop the marshmallow fluff on top of the popcorn mixture. (The fluff definitely makes the popcorn extra sticky, but there's just something about that gooeyness that makes this mixture that much more reminiscent of traditional s'mores.)
In a small bowl, melt the chocolate chips and coconut oil in the microwave in 30 second intervals. Stir until smooth and thin enough to drizzle. Using a spoon, drizzle the chocolate over the popcorn mixture. Place pan in freezer for 3-5 minutes to allow the chocolate to firm up.
Remove pan from freezer and let sit for a minute or two before serving. The marshmallows and marshmallow fluff should soften slightly and the chocolate should still be slightly firm. Eat quickly before it melts everywhere!
