Cranberry Pecan Parfait {gluten-free + vegan}

Every Thanksgiving throughout my entire life, I recall seeing a plate of canned cranberry sauce that remained basically untouched for the entire meal. That may not be exactly accurate, but I do know that I personally was never brave enough to try to congealed, purplish blob in the shape of a tin can. I vaguely remember a family member or two taking a small amount on occasion, but otherwise, it always seemed to be a leftover item that was tossed after the meal was over.

Chocolate Cream Pie {gluten free + vegan}

Last year for Christmas, I made an absolutely delicious old-fashioned Chocolate Cream Pie to mix things up from the traditional pumpkin, pecan, or apple pies. The recipe, adapted from King Arthur Flour really turned out deliciously. It was such a hit that I decided that I would make that same recipe each year from now on.

My {Minted} Christmas Wish List


Every year, as Thanksgiving is upon us, I start to panic as I realize all of the things to come. The holiday season is a big deal at my day job and there are several events that require planning and organization at the same time. Not to mention one kid's birthday falls two weeks before Christmas, and the other's is just a week after. It seems like the planning never ends!

Christmas cards always seem to be one of those elusive items on my list. I always plan to come up with a beautiful design and have them mailed early in December so they arrive in plenty of time. As much as I try and plan and hope though, I always seem to end up scrambling to find whatever generic design looks "good enough" and finally get them addressed and mailed with maybe a day or two to spare.

Pumpkin Pie is one of those classic necessities that just rounds out any Thanksgiving feast. As a teenager, my mom and I spent quite some time trying to create the perfect pumpkin pie, from crust to filling. We finally came up with our favorite one and it has been a staple each year since then. But what happens when you can no longer eat the pie you made because the crust contains gluten, or you cannot share it with your child because it contains milk and they are allergic? Why, you adapt it of course!

My kids are lovers of simple "kid" foods. Fish sticks, chicken nuggets, and corn dogs especially. We do keep these items on hand, but they are well aware that they do not get to indulge in these items on a very regular basis. I don't know that I have ever really liked green bean casserole. I remember it being on the table every Thanksgiving, but I do not recall every actually trying it. Herb Stuffing {gluten free + vegan}

My Herb Stuffing recipe was my absolute favorite part of our Thanksgiving meal last year. I was pretty excited to make it again this year. As if it wasn't simple enough already, I have found that it can easily be made in advance and refrigerated until ready to bake in order to save some time during the hectic holiday.

Two Year Blogiversary!

Today is a special day for many reasons. It is Veteran's Day. A day to honor and thank our current and past military members, who have put their lives on the line for our freedom. If you are one of these brave, outstanding individuals, THANK YOU for your service!

Today also marks my husband's and my 3-year anniversary. What an awesome day that was!

Instant Hot Cocoa Mix {dairy free}

As soon as the weather begins to turn cool, my boys start asking for hot cocoa every time they come in from playing outside. I usually cook up a saucepan of cocoa with almond milk on the stove on snow days or weekend days when I have some extra time. Halloween evening was one chilly night here, so we enjoyed our first hot cocoa of the season.
