Coffee Cake Muffins {dairy, gluten + egg free}

Prior to Easter, I was super ambitious and had planned to share all of our brunch recipes before "the" day. But the hustle and excitement that naturally comes with holidays caused me to fall a little bit behind. The silver lining is that the recipes are absolutely perfect for any day of the week!

When I was a kid, my mom made the BEST coffee cake, mostly on the occasional Sunday morning. It was fluffy and warm with just the right amount of sweet brown sugar topping. I've wanted to recreate it forever. These coffee cake muffins are perfectly soft, not too sweet, and topped with a warm cinnamon sugar crumble. Enjoy them straight from the oven or reheat them for a quick on-the-go breakfast.

DIY:: Chalk Paint

One of the best traits about our boys has to be their seemingly endless imaginations. They are typically content coming up with fun, creative ideas together and have a ball. But we do have occasions where they just plain run out of ideas.

Mason was having a hard time coming up with things to do last weekend while Big Brother was away...which tends to start getting him in trouble. When my strong-willed Little Man starts to turn argumentative, that's when I know I had better come up with something for him to do!

The weather forecast called for rain, so I knew this would be a fun project while it lasted, and would quickly wash away, making for a blank canvas again the next day.

Carrot Cake Banana Muffins with Maple Cinnamon Glaze {gluten free + vegan}

I decided on a whim to make muffins for Easter. Last year, I adapted a recipe for carrot cake muffins that worked out really well for us. They had a dairy-free cream cheese frosting and cute little Easter embellishments. This year I wanted to do something slightly different, so I recreated that recipe with a little bit of a twist!

DIY:: Reclaimed Wood Headboard

After creating our fabulous reclaimed wood dining table, we had a few planks left. I knew I would eventually put them to good use, so we have been storing them for their eventual purpose.

The idea for a reclaimed wood headboard came to me one weekend while my husband was elbows deep in our basement remodel. Of course, I always come up with additional projects to keep us both busy! I had seen a few ideas on Pinterest and decided I could make a plan of my own.

The leftover boards were already cleaned, sanded, and ready to go. Three of the boards were slightly longer than the width of our queen-size bed, and four were shorter. I had to figure out a way to cut down the longest ones and use the scraps to lengthen the shortest pieces. After a quick sketch of my plan for the final product, I ran to the hardware store for some wood and brackets. The total cost for this project was $15.38 because we had nearly everything on hand.

Chocolate Bird's Nests {gluten free, vegan + nut free}

Last Easter, I made and shared a few Easter treats that were delicious and fit our restricted diet needs at that time. Since going gluten-free over a year ago, I decided to remake those recipes and share them again. This time sans gluten!

Our Chocolate Haystacks are a super quick and simple treat that only require a couple of ingredients. Once we'd made them, we decided to rename them Chocolate Bird's Nests, which I think is much more fitting. Mason loves to help me make them, and they turned out so cute! My recipe from last year called for chow mein noodles. I searched high and low and was unable to find gluten-free chow mein noodles (short of buying stock in them and having enough on hand to supply the whole town for a decade...).

Blueberry Oat Bars {gluten free + vegan}

Do you ever wonder if recipes that claim to be "exactly like" the original version of something you would enjoy at a restaurant are too good to be true? I do. Which is one reason I LOVE to try those recipes to find out for myself.

If you are gluten-free and are not following Gluten-Free on a Shoestring, you are missing out. I began following them on Facebook and loved seeing their drool-worthy photos of gluten-free baked goods. I haven't purchased the cookbook, Gluten-Free on a Shoestring Bakes Bread YET, but it is absolutely on my list to purchase in the near future.
