1 box Rice Chex cereal
1 cup Enjoy Life Foods dark chocolate morsels or mini chocolate chips
3 bars Milkless Polar Dream white chocolate
10 mini candy canes, or 2 full size candy canes, crushed finely
scant 1/4 tsp peppermint extract
2 cups powdered sugar, separated
Dark Chocolate "Layer":
In a microwave safe bowl or double boiler, melt the Enjoy Life chocolate chips. Add the peppermint extract. (If you choose to make this traditionally and use peanut butter, you can add a 1/2 cup here to melt into the chocolate.)
In a large bowl, measure out 5 cups of the cereal. Pour the melted chocolate over the top and gently fold together until all cereal pieces are coated. Add 1 cup powdered sugar and fold or toss until the chocolate pieces are covered in a layer of sugar; set aside.
White Chocolate "Layer":
In a small bowl, stir together 3/4 cup of the powdered sugar and the finely crushed candy canes; set aside.
In a microwave safe bowl or double boiler, melt the Milkless Polar Dream bars.
In a large bowl, measure out the remaining cereal (it should be about 3 1/2 cups). Pour the melted white chocolate over the top and gently fold together until all cereal pieces are coated. Sprinkle the powdered sugar and candy cane mixture over the top and fold or toss until the chocolate pieces are covered in a layer of sugar.
Combining the layers:
In a large gallon-size zipper bag or clean paper shopping bag, combine the dark chocolate and white chocolate coated cereal pieces. Add remaining 1/4 cup of powdered sugar and seal the bag. Shake until the powdered sugar sticks to all of the cereal and the two flavors are well mixed.
