I have seen a pre-made, egg-free brand at Whole Foods, but the nearest store is over an hour away from us. Not the easiest thing to pick up in a pinch. This recipe is easy to make, and if used quickly, easy to handle. It will begin to set up as it cools, lending that creamy, fluffy, stretchy consistency.
Egg-free Marshmallow Creme
3 cups marshmallows
1/4 cup powdered sugar
2 Tbsp dairy-free butter
In a medium saucepan over medium heat, melt marshmallows and dairy-free butter together. Once melted, add sugar and stir well to combine. Use in recipes immediately.
