Chocolate Crinkle Cookies {dairy, egg, soy + gluten free}

I have seen photos of Chocolate Crinkle Cookies floating around the internet the past few weeks and I love how beautiful they look. I assumed there had to be some elaborate trick to making them look so pretty, but once I began reading about them, they are actually super simple! The powdered sugar coating adds a hint of sweetness which transforms the flavor of your ordinary chocolate cookies.

You can really use just about any chocolate cookie recipe. I love making my Chocolate Brownie Cookies. In a pinch, I have also used Immaculate Baking Company's Gluten Free Fudge Brownie Cookie Dough, which I typically keep in my freezer for last minute cookie cravings (mostly for safe school treats quickly, actually). This dough contains eggs and soy. They have a warning on the label regarding the company's manufacturing processes due to being made in a facility that processes other allergens as well. We typically avoid foods/products made in a facility where milk is used, but there are a few companies who label well and are forthcoming with their processes that I do feel comfortable with them.

Chocolate Crinkle Cookies {dairy, egg, soy + gluten free}

1 can black beans, drained and rinsed really well (no salt added if you can find them)
2 Tbsp olive oil
2 Tbsp almond milk (or other dairy-free milk)
1 Tbsp + 2 tsp almond butter (or other nut butter)
3/4 cup sugar
1/4 cup unsweetened cocoa
3 Tbsp coconut flour
1 tsp baking powder
1 tsp vanilla extract
pinch of cinnamon
pinch of salt
1/3 cup Enjoy Life Foods mini chocolate chips (optional)
1 cup powdered sugar

or 1 package prepared chocolate cookie dough

Preheat oven to 350 degrees and line a baking sheet with parchment paper. Measure powdered sugar into a small bowl; set aside.

In a high-powered blender or food processor, combine black beans, oil, almond milk and almond butter. Blend until smooth. Add remaining ingredients (except for chocolate chips) and blend until combined. Fold in the chocolate chips last.

Using a cookie scoop, scoop dough into 1 1/2 inch round balls. Roll the dough gently between your hands to form if needed. Once balls are formed, roll them in the powdered sugar until they are completely coated. Place on the baking sheet, about 2 inches apart. Once all dough has been coated, press the balls down gently to flatten the tops slightly.

Bake for 13-15 minutes. Remove from oven and allow to cool for 2 minutes before transferring from the baking sheet to a wire cooling rack. Allow to cool completely before serving.
