Instant Hot Cocoa Mix {dairy free}

#dairyfree #hotcocoa

As soon as the weather begins to turn cool, my boys start asking for hot cocoa every time they come in from playing outside. I usually cook up a saucepan of cocoa with almond milk on the stove on snow days or weekend days when I have some extra time. Halloween evening was one chilly night here, so we enjoyed our first hot cocoa of the season.

However, as easy as cooking it on the stove is, sometimes I wish for an easy, instant packet mix that I can just throw together. All of the store-bought versions I have found contain milk and other preservatives. Thankfully, I found a way to make a super simple, dairy-free version!

Instant Hot Cocoa Mix {dairy free}

Makes about 2 cups of mix

  • 1/2 cup + 2 Tbsp powdered soy milk (I use Better Than Milk powdered soy milk in original)
  • 1/2 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp cornstarch
  • 1/8 tsp salt
  • Kraft mini marshmallow bits (optional)

In a medium bowl, whisk together all ingredients. Store powdered mix into an airtight container.

For individual packets, measure 1/4 cup of the mix into a snack-size plastic bag. Add mini marshmallows, if desired.

When ready to serve, heat 8 ounces of water in a microwave-safe measuring cup. Pour the powdered mix into a mug, then carefully pour the hot water over it. Stir until dissolved. Add additional marshmallows, if desired.
