Green Bean Casserole {gluten free + vegan}

I don't know that I have ever really liked green bean casserole. I remember it being on the table every Thanksgiving, but I do not recall every actually trying it. Having a child with a severe milk allergy and avoiding gluten and dairy myself the past few years, the occasion to try it recently just has not come up.


After making my delicious Cream of Celery Soup recipe, I just knew that it would be perfect for trying out a gluten-free and vegan version of the popular side dish. I also knew that I could use my gluten-free Battered Onion Rings recipe to create thinner onion strings for a safe and crunchy topping. If I do say so myself, this recipe is a complete success!

I made my celery soup recipe in advance and had a jar of it stored in the refrigerator to use. My mom had a fantastic supply of green beans from her home garden this summer, which we blanched and froze for later use. I mixed up the soup and green beans, and put them in a casserole dish in the freezer. All I needed to do when ready to serve was let the dish thaw in the fridge overnight, then bake it until hot the next day. While the casserole is baking, you can fry up the onion strings and have them ready to go. What a great way to save time on the busy holiday!

Classic Green Bean Casserole made gluten-free and vegan using Cream of Celery Soup and homemade onion strings. Perfect for a Thanksgiving side dish!

Green Bean Casserole {gluten free + vegan}


4 cups fresh green beans, steamed until just fork-tender
1/2 recipe Cream of Celery Soup 
1 recipe gluten-free Battered Onion Rings (onions should be sliced very thinly before battering and frying for onion strings instead of thicker rings)

Preheat oven to 350 degrees. Spray an 8-inch round or square casserole dish with non-stick cooking spray; set aside.

Place the green beans in a large bowl. Pour prepared Cream of Celery Soup over the beans and fold together until the beans are coated. Pour into the dish and place in the center of the preheated oven. Bake for 25-30 minutes or until hot and bubbly. 

While the casserole is baking, prepare the Battered Onion Rings according to recipe instructions, only slicing the onions thinner to create onion "strings" instead of thicker rings. Top the baked casserole with the fried onions before serving.
