Apple Crumble Bars {gluten free + vegan}

This crumble has a buttery shortbread-style crust, warm, gooey apple filling, and a struesel-like, sweet topping. Top it with some So Delicious Dairy Free CocoWhip Coconut Whipped Topping while it is still warm, and you have a perfect dessert for any time of year!


Apple Crumble Bars {gluten free + vegan}

Base:
1 1/3 cup gluten-free all purpose flour
2 Tbsp sugar
1 tsp salt
1/3 cup shortening or dairy-free butter, refrigerated

Filling:
1 Tbsp coconut oil
4 apples, cored, peeled and sliced thinly 
1/4 cup apple preserves (other fruit flavors work fine as well)
3 Tbsp granulated sugar
2 Tbsp lemon juice
2 tsp tapioca starch or cornstarch
1/2 tsp cinnamon

Topping:
1/2 cup gluten-free all purpose flour
1/4 cup brown sugar, packed
1/4 cup dairy-free butter, softened (I used Earth Balance Soy Free)

Preheat oven to 350 degrees. Spray an 8x8 baking dish with non-stick cooking spray or line with parchment paper; set aside.

In a pan over medium heat, melt the coconut oil and add the apples. Stir to coat the apples with oil. Add apple preserves, sugar, lemon juice, tapioca starch, and cinnamon.

Stir until the mixture combines and becomes a thick sauce. Remove pan from heat and allow to cool.

In a medium bowl, whisk together the flour, sugar, and salt. Using a pastry cutter or a fork, cut the shortening or butter into the dry mixture until small crumbles are formed. Spread the mixture evenly in the bottom of the baking dish. Cover with a piece of plastic wrap and use the bottom of a drinking glass to press the crust down evenly. 

In a small bowl, combine the topping ingredients; set aside.

Bake crust for 15-20 minutes, or until it begins to turn slightly golden brown. Remove from oven. While it is still hot, pour the apple mixture evenly over the top. Sprinkle the topping mixture evenly over the apples.

Return to the oven and bake 30 minutes longer, or until the topping begins to turn golden brown. Allow to cool slightly and cut into bars. Serve warm topped with dairy-free vanilla ice cream or So Delicious Dairy Free CocoWhip.
