Apple Cider Glazed Donuts {gluten free + vegan}

I've been seeing lots of delicious looking baked donuts all over the place lately. I decided I wanted to try some and picked up a donut pan for cheap with a great coupon at Michael's. I have the Wilton brand pan that makes six donuts at a time, but this one that has 12 spots would be so much better. I may have to get it too!



When I was a kid, we would occasionally pick up donuts from Dunkin' Donuts or a local grocery store. My favorite was always the maple bar, or "long john" as we called them The perfect combination of salty, flaky pastry topped with sweet creamy maple flavor was so delicious!

I haven't perfected a gluten- and dairy-free flaky donut yet, but cake donuts are pretty simple and really yummy. My kids love these donuts and I'm sure they will now expect to have them for breakfast every morning!

What I love about these donuts is that the flavor can be changed slightly just by substituting applesauce or pumpkin puree for the bananas, so they are perfect for any season. I decided to add an apple cider glaze this time as it is perfect for this fall season.

Apple Cider Glazed Donuts {gluten free + vegan}

Makes 10-12 donuts                                             



Glaze:

  • 1 1/2 cups powdered sugar
  • 3 Tbsp apple cider
  • pinch of salt


Preheat oven to 350 degrees. Spray a donut pan with non-stick cooking spray; set aside. In a medium bowl, whisk together the flour, flaxseed, baking powder, cinnamon, baking soda, and salt.

In a large mixing bowl, combine the applesauce, yogurt, coconut oil, maple syrup, and vanilla. Gradually mix the dry ingredients in and mix until just combined.

Spoon batter into a piping bag and pipe evenly into a donut pan. Bake for 10-12 minutes or until set and the tops are just beginning to brown. Allow donuts to cool.

Whisk together the powdered sugar, apple cider and salt in a small bowl. When donuts are cooled, dip the tops into the glaze, allow the excess to drip off and then place on a cooling rack or parchment paper until ready to serve.
