Cinnamon Apple Cider Ice Cream {gluten free + vegan}

Just when I thought all of the pumpkin recipes were making it feel like fall is just around the corner, this creamy, decadent, cinnamon-apple-filled ice cream has taken the cake. My usual ice cream recipes do not require an ice cream machine, but I really enjoyed how this one changed things up. With bits of sweet apples, the warm and spicy cinnamon and a smooth apple cider syrup swirl, it is packed with sophisticated flavors, but is fun for everyone to enjoy. And the best part... it is vegan too!



Typical ice creams are made with cow's milk, which has milkfat to make a creamy consistency. Sometimes they even have eggs as well for that custard-y feel. When creating ice cream with dairy-free milk and no eggs, they can be less creamy than their counterparts. This recipe is surprisingly creamy from the combination of So Delicious Dairy Free Almond Milk Creamer and brown sugar, along with the syrupy goodness of apple cider swirled throughout.

The brown sugar instead of granulated white sugar also gives the base a bit of a caramel flavor, which goes perfectly with the cinnamon. I debated adding chunks of apple as a mix-in, but eventually decided the little punches of apple flavor made it taste even more like fall (if that is possible!).

I recently read about making molasses from apple cider. It sounds like such an amazing concept! The first batch I tried, I left boiling for too long and scorched it. For this recipe, I did not want the full molasses consistency, but more of a syrup. I removed the cider from the heat just as it was caramelizing and it was absolutely perfect.

You will definitely want to make sure anything you mix into your homemade ice cream is cold before adding it. The base will be mixed to soft serve consistency in the machine and the additions come to play during the last few minutes of churning. Also, if you add the syrup to the machine, it will actually mix into the ice cream and not create a distinct swirl. I find it works best to layer the ice cream and syrup in your container, or to drizzle the syrup in while scooping the ice cream into the container. Either way allows for that beautiful swirl to weave throughout the mixture.

Cinnamon Apple Cider Ice Cream {gluten free + vegan}



Ice Cream Base:
Place the can of an ice cream machine in the freezer to chill. In a medium saucepan, whisk together the brown sugar, cinnamon and salt. Place pan over medium heat and gradually pour in the creamer and vanilla. Allow the mixture to heat up until the brown sugar is dissolved, but do not allow it to boil. Once the sugar is dissolved, remove from heat and allow the mixture to cool. Pour into a bowl and place the mixture in the refrigerator to chill. (You could also chill the mixture faster in the freezer, but not long enough to harden.)

Apple Cider Swirl:
Pour apple cider into a small pan with a lid and place over high heat. Once it begins to boil, lower the temperature to medium and remove the lid. Allow to cook at a steady boil until the cider reduces and begins to caramelize. Mine took almost exactly one hour to reduce. Pour into a small bowl and place in the refrigerator. As it cools, the consistency will become a thick syrup.

Diced Apple Chunks:
While the cider is reducing, melt the coconut oil in a small saute pan over medium heat. Add the diced apples and cinnamon. Reduce heat to low and saute the apples until they become soft. Pour apples into another small bowl and refrigerate.

Remove the can of the ice cream machine from the freezer and pour the chilled ice cream base into it. Place the can in the ice cream machine and begin mixing according to manufacturer instructions. You'll want to add the apples near the end of the mixing time, which for me took 30 minutes. When ice cream reaches a soft serve consistency, add the diced apple chunks and continue mixing for about 5 minutes. (Note: if you try adding the apple cider syrup at this point, it will just mix into the base and won't swirl. The flavor would still be delicious, but I like the swirl effect.)

Remove the apple cider syrup from the refrigerator and stir it to loosen it up a little. Spread 1/3 of the ice cream mixture into a freezer-safe container. I used a disposable foil loaf pan. Spread 1/2 of the apple cider syrup over the top. Add another 1/3 of the ice cream and the rest of the syrup. Top with the remaining ice cream. Cover the container and place in the freezer until the ice cream hardens, about 2-3 hours.
